Légine fish, also known as Patagonian toothfish, comes mainly from the cold, deep waters of the Southern Ocean.
It is found around:
Kerguelen Islands (French Southern Territories)
Antarctica

What makes its meat special?

Unlike many white fish, légine has a relatively high fat content.
Texture: Soft, delicate and flaky.
Taste: Rich, buttery and slightly sweet.
Cooking: Stays moist during cooking because of its natural oils.
Best methods: Pan-searing, oven roasting, steaming or grilling.

What is Capicola?

Capicola, also known as Capocollo or Coppa, is a traditional Italian cured meat.

It is traditionally made from the beef , seasoned with salt, black pepper, paprika, garlic and other spices.
The meat is then cured and either air-dried or, in some variations, cooked.
