With roots in Middle Eastern and South Asian traditions, Haleem has become a cherished part of Mauritian food culture, loved by Mauritians both here and abroad.
Whether it’s a quick snack during or after work, or a comforting family dinner, Haleem is always there to nourish and connect. Rich in protein, grains, and spices, it’s a healthy balanced meal that pairs perfectly with fresh hot baguettes.
And then come the finishing touches: fresh herbs, a squeeze of lemon, and a fiery chilli paste. Together, they awaken the senses and revive childhood memories of evenings spent around the table, wedding eves, a Sunday afternoon at the seaside, sharing laughter and stories over steaming bowls of Haleem.

Recipe for Haleem
Ingredients:
Cumin, coriander, salt, cinnamon, turmeric, cardamom, cloves, pepper, star anise, onion, nutmeg, garlic, ginger, chilli, bay leaves, black lentils, red lentils, chana dal, toor dal, yellow peas & wheat.
Method:
• Heat oil in a pressure cooker and sauté 1 onion.
• Add chicken, a little salt and let fry.
• Add garlic, ginger, ½ sachet Haleem spice, stir well and allow to cook until flesh is tender, then transfer in a bowl. (For meat; cover pressure cooker with lid and allow to cook for 15 minutes.)
• In same pressure cooker, add 1 onion and braise a little.
• Add pulses mix. Stir well.
• Add remaining Haleem spice and stir for 1 minute.
• Add 1 liter of water; stir, the lock the pressure cooker and allow to cook for about 25 minutes on low heat.
• Open pressure cooker, add cooked flesh, monosodium and ½ liter of water, stir well.
• Add salt to taste and allow to cook on medium heat for at least 20 minutes.
• Once done, add ghee, Garam Masala and mix well.
• Garnish with fried onions, coriander and spring onions.
• Serve with lemon slices, chili sauce and bread.
