Scottish salmon is renowned for its quality and the Global G.A.P assures responsible farming practice to produce the very best salmon in appearance, freshness and taste.
1. Ocean Dash
The company has been operating for the past two years targeting only premium loca
tions for the commercial sale of seafood products . The idea is not to flood the market but to provide our targeted segment with products of a higher value. I am personally involved in the company but more on an administrative level. Once we have finalised your customer database sheet and orders are ongoing , my colleagues will take up from there.
2. Seafood products
Our seafood products are Scottish and delivery is made every Thursday upon clearance from the Airport. All sanitary norms are respected to ensure that the product delivered is fresh. Our supplier from Scotland has been privileged by the Queen's award for the quality of its salmon. Below you will find a brief description of the products available:
SALMON
CLASSIC SMOKED SALMON is delicately flavoured. The fresh salmon fillets are dry cured with sea salt and brown sugar and then smoked over oak chips from whisky casks. KINGLAS FILLET The centre cut taken from the crown of a Smoked Salmon ‘Classic’ fillet.The Kinglas Fillet combines depth of flavour and subtle notes of smokiness with an exquisitely delicate texture. BRADAN ORACH Smoked Salmon (Golden salmon in the Gaelic). Fresh salmon is cured with sea salt then strongly smoked , giving it a full rich flavour in the traditional Highland style
BRADAN ROST (roasted salmon in the Gaelic) Fresh salmon is cured with salt and brown sugar and then smoked at ambient temperature before extra fire boxes are lit and the fillets cooked through at 80 degrees. This salmon has a moist flaky texture and can be eaten hot or cold
CITRUS INFUSED SMOKED SALMON
A refreshingly different product, our citrus salmon is hand filleted, marinated in gin and cured with salt, sugar, pepper, juniper and mixed citrus zest. Winner of New Product Award, Highland and Islands Food and Drink Awards 2011. WHISKY MARINATED SMOKED SALMON
Combines delicious smoked salmon with specially selected 21 year old Glengoyne malt whisky.Flavour and texture is rich and subtle. LIGHTLY SMOKED Salmon
Seasoned with salt and black pepper and lightly smoked using a blend of oak, cherry and field myrtle wood. The smoking gives the salmon a delicate flavour and rich texture. Can be cooked using any recipes or methods that use fresh salmon and makes a distinguished alternative to the fresh fish as an ingredient. GRAVADLAX
Gravadlax (marinated salmon) is cured with dill, sea salt and unrefined brown sugar. OYSTERS
Our oysters are grown naturally, on the shore at Ardkinglas at the head of Loch Fyne, and by our supplier's partner growers in Argyll and the Islands. At all our chosen sites, the oysters feed entirely naturally on plankton. There is no artificial input, of feed or anything else, at any stage. This is an entirely sustainable activity. MUSSELS
Our mussels are reared by the supplier on ropes near the loch’s headwaters at Ardkinglas, and by the supplier's partner growers in Argyll, the Islands and Shetland. SHELLFISH
Langoustines:
Known locally simply as ‘prawns’, the langoustines live in burrows in the hard bed of the loch, at around ten fathoms or deeper. Supply is generally consistent and of good size and quality, as the immature crustaceans escape through the mesh of the creels. King Scallops and Queen scallops
3. Oyster Cooler Box
Kindly find attached a brief description on the machine as well as some guidelines with regards to its maintenance. The advantage of having an oyster machine ( if you are planning to have Oyster on your menu) is to provide your customer with fresh oysters any time of the year. Please note that with regards to maintenance we do offer our assistance at a very reasonable rate .And if our services are not retained ,the first three maintenance sessions are offered and one of your staff is trained to do the maintenance.There is a 1 year warranty for the chiller system and in case of breakage , repairs can be sorted out by our team but that too would be at a cost. Why Global G.A.P? Farmers must demonstrate respect for the natural environment
Fish are fed a healthy high quality diet, from sustainable sources , with feed management systems in place to avoid seabed damage, overfeeding or competition for food. Farm sites rested to allow natural recovery and regeneration of the environment. Maximum stocking density is set by the RSPCA.
