The soul of an Agave spirit isn’t found in a factory—it’s found in the miles walked and the hours of silent, grueling labor under the sun. 🌵✨

When we sip Mezcal, Tequila, or Bacanora, we aren’t just tasting a drink; we are witnessing a legacy. I’ve often thought about the families who spend entire days harvesting, sometimes carrying heavy agave hearts for miles over rugged terrain using only hand instruments. This isn’t just production; it is true artistry.

Behind every bottle are thousands of stories of love, pride, and a relentless work ethic passed down through generations. I have been incredibly fortunate to meet people who have shaped my understanding of this beautiful art and who work tirelessly to protect it.

A special thanks to Luis Loya owner of , who spends his days traversing the hidden corners of Mexico to find small, artisanal producers who might otherwise remain unsung. And to who is so much more than a digital voice—he is a passionate advocate who uses his platform to shine a necessary spotlight on the human beings behind the spirit.

Today, we’re honoring the old ways with recipes that have been whispered through generations. We’re talking about the kind of slow-food that requires patience, a hot fire, and a lot of heart.

The lineup was a masterclass in regional tradition:

Lamb cooked underground: Pit-roasted for hours until it’s so tender it practically melts before it hits the tortilla.

Cabrito en Salsa: A rich, savory classic that tastes like the very best of home.

Patagorria: The ultimate “if you know, you know” dish. This traditional stew is a true testament to the regio philosophy of respecting the whole animal. It’s bold and authentic.

The ultimate hygge is found where the pavement ends and the scent of wood-fired ovens begins. 🕯️🌾

Yesterday, we took a detour from the hustle of Monterrey to find a hidden gem in Nuevo Repueblo, a tiny town of about 900 people tucked away in the heart of Nuevo León. Our destination? Panadería de Eladio.

In a place this small, you don’t follow Google Maps; you follow your nose. This isn’t just a bakery; it’s a time capsule. Watching the steam rise off the fresh pan dulce in the cool morning air is the definition of a “slow living” moment.

There is no “industrial” here. Just the warmth of the oven, the dust of the flour, and the kind of recipes that have been perfected over generations. We walked out with a warm bag of bread that felt like a hug for the soul. 🥐✨

If you’re looking to escape the noise, head south. Sometimes the best flavors aren’t in the big cities—they’re in a town of 900 people, inside a small bakery run with a lot of heart.

There is nothing more “regio” than a Northern Mexican feast where the fire is hot and the company is everything. Last night’s dinner was otro nivel—a true celebration of flavors that feel like home, but with that elevated cozy touch we love.

We went full regio with the menu: perfectly crisp machitos, tender cabrito, and, of course, some incredible steaks. But the real surprise? When the cuts arrived, they weren’t just served with potatoes—they came with a side of rich, buttery bone marrow (tuétano) that was una joya. 🥩🦴 It totally stole the show!

We finished the night con broche de oro with a decadent duo of chocolate cake and a fudgy brownie. 🍫🍰 Pure bliss.

Honored to Share the Spirit of Hanal Pixán (Día de Mu***os)

I debated for a while about sharing this picture. Moments of deep cultural significance like this feel incredibly personal and sacred, and I wanted to be sure I could convey the reverence and joy I felt without taking away from the meaning.

A huge and heartfelt ”thank you” to the incredible family for their kindness, generosity, and for patiently teaching me so much about this sacred and beautiful tradition. It was an experience I will truly never forget.

I hope this image, which I took with their blessing, conveys just a fraction of the deep love and warmth I felt in their home.

The Ultimate Breakfast? It Just Might Be Mexican. 🇲🇽

“Hygge” is universal, and that profound sense of warmth and comfort is alive and delicious in a traditional Mexican breakfast. It’s a soulful start to the day!

Some of the morning treasures that deliver that unique comfort:

“Huevos Divorciados:” Two eggs, happily “divorced” by beans or chilaquiles, each bathed in its own distinct red and green salsa.

“Pan Dulce:” The perfect sweet hug. These iconic pastries (think fluffy conchas!) are best dipped into a hot cup of café de olla.

“Atropellado:” A true regional gem from **Nuevo León**! This deeply savory scramble of dried, shredded beef (*carne seca*) cooked with salsa is hearty and satisfying.

“Menudo:” More than a weekend ritual or a remedy—this rich, spicy tripe soup is a true labor of love and the ultimate expression of communal comfort food.
