La kale lacinato, o cavolo nero, ingrediente de la ribollita en la Toscana: una sopa que se recalentaba una y otra vez durante la guerra, hecha con pocos ingredientes y mucho oficio.

Esa forma de cocinar no nos es ajena. En México también entendemos la cocina que aprovecha, que espera, que transforma lo sencillo en algo que sostiene. Está de temporada y este es su mejor momento: hojas firmes, sabor profundo, hechas para el fuego y la olla.

Cocina que nace de la necesidad y permanece.

Lacinato kale, or cavolo nero, a key ingredient in Tuscan ribollita — a soup reheated again and again during the war, made with few ingredients and a great deal of craft.

That way of cooking isn’t foreign to us. In Mexico, we also understand a cuisine that makes the most of what’s available, that waits, that transforms the simple into something sustaining. It’s in season now, at its best: firm leaves, deep flavor, made for heat and the pot.

Cooking born of necessity, and meant to last.

Cuando los misioneros españoles llegaron a Centroamérica en el siglo XVI, quedaron cautivados por la pasiflora.

En su forma leyeron los símbolos de la crucifixión:
la corona de espinas en sus filamentos,
las cinco heridas en sus estambres
y los tres clavos en sus estigmas.

La llamaron Flor de las Cinco Llagas. De esta lectura sagrada de la naturaleza nació el nombre maracuyá — la fruta de la pasión. Simbolismo en la botánica.

Nuestro trabajo va más allá de vender productos. Entendemos el alimento como cultura, conocimiento y responsabilidad.

Creemos que saber de dónde viene la comida —su origen, su temporada, la forma en que se cultiva— cambia la manera en que se valora. Define cómo se cocina, cómo se consume y cómo se relaciona con la salud y con la tierra que la hace posible.

Cosmic Purple: morada, rica en antocianinas, perfil intenso.

Kyoto Red: roja tradicional de Kioto (Kyōyasai), cultivo patrimonial protegido; rica en betacaroteno, minerales y antioxidantes.
