Mesquite is restrained. It is not the honey that takes over the plate, which makes it useful exactly where a louder one would ruin things.
Over goat cheese, or a blue. On sourdough with salted butter. In plain yogurt. In a light roast coffee, where it doesn't bury the acidity. In a spirit over ice, with lime.
One origin, one bloom: monofloral mesquite from Jalisco, raw and never heated. It crystallizes, sometimes overnight, and turns pale and spreadable, with the texture of butter. That is not a fault. It is the evidence that nobody heated it. Warm water, never boiling, brings it back.
