Stuffed Baked Potatoes Recipe 🥔🧀🔥
A crispy-skinned, fluffy, and loaded baked potato filled with cheesy, creamy, and savory goodness! These Stuffed Baked Potatoes make an amazing side dish or a complete meal with your favorite toppings.

Ingredients:
For the Potatoes:
- 4 large russet potatoes (best for baking!)
- 2 tbsp olive oil or melted butter (for crispy skin!)
- ½ tsp salt
- ½ tsp black pepper
For the Stuffing Mixture:
- ½ cup sour cream (or Greek yogurt for a lighter version!)
- ¼ cup milk (or heavy cream for extra richness!)
- 2 tbsp butter, melted
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix!)
- ½ tsp garlic powder (for extra flavor!)
- ½ tsp onion powder (optional, adds depth!)
- ½ tsp paprika (adds warmth!)
- ½ tsp salt (adjust to taste!)
- ½ tsp black pepper
- 2 tbsp chives or green onions, chopped (for freshness!)

- 4 slices crispy bacon, crumbled

Instructions:
1. Bake the Potatoes 🥔🔥
1. Preheat oven to 400°F (200°C).
2. Scrub the russet potatoes clean and pat dry.
3. Poke several holes in each potato with a fork.
4. Rub olive oil or melted butter all over the potatoes and sprinkle with salt & black pepper.
5. Place potatoes directly on the oven rack or on a baking sheet.

1. Let baked potatoes cool slightly for about 5-10 minutes.
2. Slice each potato in half lengthwise and scoop out the fluffy insides into a mixing bowl. (Leave about ¼ inch of potato inside the skin so they hold their shape!)
3. Mash the potato filling with sour cream, milk, butter, shredded cheese, garlic powder, onion powder, paprika, salt, and black pepper.
4. Stir in chives, bacon, or any other add-ins.
