Simple food, cooked well, will always win.

A perfectly cooked beef fillet, French green beans, grilled potatoes, and a generous spoonful of homemade Café de Paris butter melting into every bite.

This is the kind of meal I grew up loving during summers in Europe. Honest ingredients, uncomplicated cooking, and flavours that don’t need to compete with each other.

Simple. Elegant. Completely satisfying.

Browning, simmering, stirring, tasting… taking the time to let everything develop properly.

Pancetta, red onions, garlic, tomato, charred oyster mushrooms and hours of slow cooking in Mérida heat 🔥

I love cooking like this for the people I care about. Letting everything cook slowly, building flavour properly and filling the kitchen with the smell of something comforting.

Spent the day cooking for my girl friends yesterday 💜

A big Thai-inspired peanut curry with roasted vegetables and charred cauliflower steaks on the side. Fresh ingredients, lots of spice, lots of tasting along the way, and one very happy kitchen by the end of it.

Yesterday’s plan was a fresh Turkish-style mung bean salad.
Then I accidentally overcooked the beans… so the kitchen decided otherwise.

They became sesame-crusted mung bean patties with sweet corn, sumac and a herbed yogurt instead.

I think this version might be a new favourite! ✨
