An update on how things are going with the Bochet. Beautiful colour and clarity.

Still a bit of bite that I’m hoping will mellow over some time. It’s very young yet.

After 18 days in the fermenter it's time for the first sample of the Dzidzilche Dry at 12.5% ABV.

Strong honey on the nose. Medium bodied. Caramel, citrus and floral tones on the tongue. Still slightly carbonic. Astringent/bitter at the end.

Will check in on it again in three days and will likely stabilize, slightly back-sweeten to cut the bitterness and set aside for aging.
