Les presentamos a Doña María, esposa de Eleuterio desde hace cuarenta y cinco años y la razón por la que el palenque funciona como funciona desde que cualquiera tiene memoria.
Criaron cinco hijos. Tres viven en Estados Unidos. En la casa se habla más que nada zapoteco, y la cocina es su propio idioma, uno que ella transmite como se lo dieron a ella. El tejate, la masa, el fuego, todo aprendido al lado de quien ya sabía.
Sigue cocinando para todos los que trabajan en el palenque. Cuando vamos, también nos da de comer. Nada de lo que hacemos sería igual sin ella.

Meet Doña María, Eleuterio's wife of forty-five years and the reason the palenque has run the way it has for as long as anyone can remember.
They raised five children together. Three of them live in the United States now. In the house they mostly speak Zapoteco, and the cooking is its own language, one she passes down the way it was given to her. The tejate, the masa, the fire, all of it learned by standing next to someone who already knew.
She still cooks for everyone who works the palenque. When we visit, she feeds us too. Nothing we make would exist the way it does without her.
