Gluten and dairy free chocolate cake. Alhamdulillah. Jadi jugak cake ni. Not great but not too shabby. Customer plans to put her own toppers on the cake but had requested some piped buttercream flowers on the cake in addition to the earlier planned fondant flowers on the side. Jujur je I bagi tau customer that buttercream flowers isn’t my thing. I haven’t done it in years and I’m really not good at it. But customer mintak juga buatkan. Sikit2 je, she said. She also requested that I only use natural food coloring for the flowers.
So here it is. For the natural food coloring I used real food powders : turmeric, blue pea flowers, beet root, dragon fruit, and spinach.

Gluten free and refined sugar free chocolate fudge cake. I used molasses sugar to sweetened both the cake and the Swiss meringue buttercream. It made the buttercream taste like buttery caramel. Absolute yumms!

Sometimes when I’m make lemon meringue tarts, I end up with leftover meringue. Nak buang sayang.. so I freeze it. Yasss!...

Sometimes when I’m make lemon meringue tarts, I end up with leftover meringue. Nak buang sayang.. so I freeze it. Yasss! Leftover meringue can be frozen. Place in an airtight container and freeze up to a month. Bila nak guna, defrost overnight in the fridge and whip balik sampai fluffy. Boleh guna as meringue topping on your next batch of lemon tart, or mix it into more meringue for Swiss meringue buttercream. I tak pernah try bake leftover meringue to make meringue cookie so I don’t know if that will work.

Accidentally over whipped my Swiss meringue buttercream. Cuak kejap sebab habis berketul2. I took about 1/2 cup of the buttercream out and panaskan over a bain marie (sebab I tak de microwave) and then poured the melted SMBC back into the rest of the SMBC. Folded it with a silicone spatula sampai smooth balik. Alhamdulillah, helok cantik je the buttercream.
So if this happens to you, no need to cuak2. Heat up a small portion of the SMBC/ IMBC (tak sure ni boleh guna untuk American buttercream ke tak) and mix it back in to the rest of the buttercream.
Nak panaskan tu, sukati lah nak cara macam mana.. double boil ke, microwave ke.. nak guna aura je ke.. but I won’t heat it directly on the stove lah. Panas sangat kang. You don’t want an oily mess. You want to just gently melt it.

I tak de favorite brand when it comes to conserves / jams. Tak selalu makan pun. When I do buy them, I usually tengok kat % of fruit je. Do you have a favorite brand ? What are your considerations when you buy some ? This jar is labeled gluten free 😃. Bonus.
