A few factors contributed to our dent corn project. The first was that corn tortillas are delicious but masa harina is expensive because it is imported. Second was the instability of chicken feed prices.
While we wanted to get Aztec varieties, White Hickory King corn was the next best option we had.
Now that the corn is harvested, it's time to dry it. To do that, we learnt how to plait corn husks. Fun, but a swarm of red ants had made their nest in the corn cobs, so not very fun.
Ideally the next step is nixtamalisation and corn meal, but we want more corn. So, we'll be saving this for a second, much larger planting.
