Cream, milk, egg yolk, sugar, vanilla. Five ingredients. That is all.

The custard is sieved until there is nothing left to sieve. That step alone separates what you are about to taste from every version of this you have had before.

Then the torch. Thin enough to crack. Caramelised evenly.

There is a difference. Most people have never tasted it.

Between the first and the second it sits in the freezer. Not to set completely — to hold just enough to receive what comes next.

The dark chocolate first. Then vanilla panna. The slope where they meet is the part that cannot be rushed and cannot be faked.

Then the sieve. Fine cocoa, falling. The aroma arrives before the spoon does.

Quiet Burn.

Most basque cheesecakes are baked to be cut. A gooey centre cannot survive that. So most do not have one.

We bake each one as a single portion. For one person. At the time they order it.

The edge holds. The centre does not. That is the point.

Less than 10g of sugar per 100g — the least of any dessert we make. The cream cheese and the char are doing everything already.

Temperature. Timing. Always the same two things.

The hardest part is not what goes in. It is knowing exactly when to take it out.
