In the Teochew food culture, pairing plain porridge with savoury dishes is the classic combination.
🏮 潮州人爱吃稀粥,有别于广东粥的浓稠。在潮州话中,粥称为“糜”,吃糜是很日常的习惯,特别是在老一辈人的生活中。吃白糜太单调,那就配咸,增添滋味。
Teochews love their porridge watery thin, which is quite different from the thick Cantonese congee. In the Teochew dialect, porridge is called "muay", and eating muay is a common daily habit, especially in the lives of elderly Teochews. Having plain porridge can be rather bland, so "puay giam" will add flavour to the meal.
🪭 所谓“配咸”,指的是“咸杂”,大多是腌渍或卤过的小碟菜肉。这些咸杂都有悠久的历史,是先民为了保存食物而研究出来的方法。看老潮州们一口白粥配一小撮咸,吃得慢,吃得享受,吃成一道经典。
"Puay giam" refers to "chap giam', which is usually preserved or braised side dishes. These chap giam go way back in history, the culmination of generations of research done by early Teochews looking for ways to preserve their foods. Elderly Teochews would take a mouthful of muay along with a dash of giam, savouring it slowly, enjoying the quintessential Teochew meal.
🎍 尤其咸杂的选择多,而且各具滋味,一碟碟的咸杂,其实也是另一种味觉上的丰盛。换个角度来看,白糜极为清淡,配上各种极咸的滋味,那是刚刚好的平衡。这一咸一淡相互调和了,正是所谓的阴阳调和,那可是上升到生活哲学的层次了。
Chap giam comes in many varieties, each with its own unique taste. Dishes after dishes of chap giam makes for a feast of flavours. Since plain porridge is bland, when combined with an assortment of savoury tastes, the flavours would all balance out nicely. A spoonful of blandness, followed by a spoonful of savoury taste, is like the yin-yang balance, which can be elevated to the level of life's philosophy.
