Champagne Pertois Moriset

Founded in 1951 by Yves Pertois and Janine Moriset, both from long-standing Côte des Blancs winemaking families, Pertois Moriset remains a proud family estate now led by their granddaughter Cécile and her husband Vincent. Based in Le Mesnil sur Oger, the domaine farms 20.7 hectares across Grand Cru vineyards in the Côte des Blancs and the Coteaux Sézannais.

The vineyards are cultivated with great respect for biodiversity, using grass cover, ploughing, and an all-electric tractor, while minimizing chemical use. In the cellar, precision and patience guide every step. Fermentation takes place at controlled temperatures, and most cuvées avoid malolactic fermentation to preserve purity and freshness. Wines rest on lees for extended periods to build texture and depth.

Founded in 1974 by Alain and his father, the domaine sits at high altitude in the Côtes du Vivarais, the gateway to the Southern Rhône Valley. The hills run parallel to the Ardèche River, opposite the Côtes-du-Rhône appellation.⁣

Today, Alain works alongside his son, David-Alexandre, cultivating 15 hectares of wild, stony vineyards organically, aided by their loyal draft horse. Their dream is to create some of the greatest wines of the Southern Rhône, guided by determination, focus, and inspiration drawn from winemakers across France.⁣
Freshness of the fruit is paramount. ⁣

Grapes are loaded directly into fermentation tanks via top-loading hatch doors, bypassing the cellar, where they ferment for twenty days. Wines are then aged in Burgundian oak barrels, chosen for their squat shape which enhances finesse and allows the lees to settle naturally. The wines are bottled without fining or filtration to preserve authenticity.⁣

Every year, the last Thursday of October celebrates Carignan Day, honouring one of the Mediterranean’s most characterful and expressive grapes. Originally from Spain, Carignan found its home in southern France, where old vines rooted in limestone and schist soils yield wines of energy, spice and depth.

Domaine Anne Gros & Jean-Paul Tollot represent the meeting of Burgundy and the Languedoc. Established in 2008, the estate unites Anne Gros of Vosne-Romanée and Jean-Paul Tollot of Chorey-lès-Beaune, bringing Burgundian precision to the warm, rugged terroirs of Minervois. Their work focuses on expressing the individuality of each site with minimal intervention and remarkable finesse.

Among the finest expressions is Les Carrétals, a cuvée from Minervois crafted from century-old Carignan vines. The wine reflects its origins with notes of wild herbs, black cherry, spice and a mineral freshness that speaks of the garrigue and limestone hillsides.

Carignan’s vibrant acidity and savoury spice pair beautifully with Malaysian favourites like beef rendang, ayam masak merah or grilled lamb with sambal. For a Mediterranean touch, enjoy it with roasted duck, cassoulet or aged cheese.

On the heights of Clavin, at the northern reaches of Châteauneuf-du-Pape, stands Domaine de la Vieille Julienne. The estate, among the most respected in the Rhône Valley, traces its origins to the 17th century. Since 1905, it has remained in the Daumen family, carrying forward a legacy deeply rooted in the land.⁣⁣

In the 1960s, Maxime Daumen began bottling the domaine’s wines under its own name, marking an important step toward independent production. When Jean-Paul Daumen joined in 1990, he ushered in a new era guided by natural viticulture, low yields, and an unwavering pursuit of purity. His approach combines respect for nature with meticulous precision in the cellar.⁣⁣

Under his care, the domaine gained international acclaim and became one of the finest producers in Châteauneuf-du-Pape. Today, the sixth generation continues this legacy, with Antoine Daumen preparing to take the reins.⁣⁣

The vineyard covers twenty hectares in a single, continuous block of old vines, divided between Châteauneuf-du-Pape “Les Trois Sources”, Châteauneuf-du-Pape “Les HauLieux”, and both red and white Côtes du Rhône “Clavin”. The soils consist of galets roulés (pudding stones), gravel, sand, and red clay, layered over ancient miocene safres formed more than eight million years ago. ⁣

All traditional and original grape varieties are selected, reproduced, and planted using complantation, where different varieties grow together within the same plot. Vinification remains traditional with natural fermentation on indigenous yeasts to reveal the singular character of each terroir and vintage. Following a long and slow fermentation, the wines are transferred into large oak foudres for aging. After 18 months, bottling takes place without fining or filtration.⁣⁣

Today, we raise a glass to the world’s most celebrated sparkling wine and the remarkable terroirs that shape its identity.
Centuries ago, the wines of Champagne were still and pale. When bottles began to re-ferment naturally in the cold cellars of northern France, winemakers saw it as a fault. The buildup of gas caused bottles to burst, earning the nickname le vin du diable, or “the devil’s wine.”

The creation of Champagne relies on a second fermentation, a process documented by Christopher Merrett in 1662 by adding sugar to still wine. Later in the 17th Century, Dom Pérignon refined the foundational blending and winemaking practices by what we now know as méthode traditionnelle. Further innovations included stronger glass strength, temperature control cellars, and the 1844 invention of the muselet (wire cage securing the cork) by Adolphe Jacquesson, which keeps the bottles safe and strong under pressure.

Champagne houses also have the unique tradition of blending wines from multiple vintages to create consistency, depth, and a signature house style that transcends any single year. Only wines made within the Champagne AOC can bear the name Champagne. No other region in the world may use it. The area’s chalk and limestone soils preserve acidity and finesse, giving Champagne its unmistakable tension and elegance. Seven grape varieties are permitted, with the three principal grapes being Chardonnay, Pinot Noir, and Meunier. The rarer heritage grapes Arbane, Petit Meslier, Pinot Blanc, and Pinot Gris appear in limited blends and experimental cuvées, offering glimpses into Champagne’s ancestral diversity.

In regards to Malaysian cuisine, the interplay between texture, spice, and aroma creates a natural harmony with Champagne’s vibrant structure.  The crisp purity of a Blanc de Blancs cuts through the creamy richness of nasi lemak. The fuller, red-fruited depth of a Blanc de Noirs complements laksa lemak. The smoky char of satay pairs beautifully with the toasty layers of a vintage cuvée. A lively rosé brightens the fiery tang of assam pedas, while a creamy Demi-Sec Champagne embraces the sweetness of kuih for a delicate finish.

𝐃𝐨𝐦𝐚𝐢𝐧𝐞 𝐒𝐭é𝐩𝐡𝐚𝐧𝐞 𝐎𝐠𝐢𝐞𝐫, 𝐂ô𝐭𝐞 𝐑ô𝐭𝐢𝐞⁣⁣

Rooted in the historic slopes of Ampuis, the Ogier family has tended vines in Côte-Rôtie for seven generations. Until 1982, Stéphane’s father, Michel, sold their fruit to local négociants before producing the family’s first wines at the domaine in 1983.

After five years of oenological study in Beaune, Stéphane returned home in 1997 with a clear vision shaped by his time in Burgundy. His philosophy is guided by precision and sensitivity to terroir, revealing the true character of each parcel.

He has since expanded the estate to include vineyards in Côte-Rôtie, Condrieu, Seyssuel, and further south on the Plan de Dieu. The soils of leuco gneiss, mica schist, and stone bring depth, tension, and minerality to the wines. Each parcel is fermented separately to preserve its individuality, resulting in as many as twelve distinct expressions of Côte-Rôtie.

Blends are refined each year to reflect the character of the vintage. Stéphane adjusts destemming according to site and season, and while most wines mature in 228-litre barrels, he now uses far less new oak than in his early years. His focus is on purity, balance, and texture. In the whites, he seeks tension and freshness, occasionally partially blocking malolactic fermentation to retain vibrancy and energy.

Domaine Chantal Lescure

After being in the hands of the Machard de Gramont family for over 30 years, it is now the turn of Jean-Philippe Girard to take over the running of the estate.
Jean-Philippe Girard continues to pursue his passion for fermentation through the wine industry. A true lover of Burgundy wines, his ambition is to continue to raise the Domaine Chantal Lescure among the leading estates.

In partnership with Éric Rousseau, from the prestigious estate of the same name in Gevrey-Chambertin, and still supported by François Chavériat, the estate’s cellar master, these three lovers of the terroirs will continue to write history and ensure that the Domaine Chantal Lescure lives on for many golden years to come.

Over the last 25 years, a long process of work on the vineyard methods has been undertaken with the aim of preserving the soil and respecting the vines as much as possible. To achieve this, the team works the soil, prunes the vines short, does green work and harvests the grapes by hand. At the estate, the aim is to have living soils and informed grapes to produce authentic wines.

With a view to gentle, low-intervention wine growing, the harvest is carried out by hand and the grapes are selectively sorted before the wines are aged on their lees in a cold cellar for around 16 to 18 months. Very little new wood is used to age the wines. They are then drawn off 1 month before bottling. The wines are not filtered.

The estate’s wines are expressive, elegant and classy. We aim to produce authentic wines that best reflect the expression of our plots and grape varieties. Our vintages have great ageing potential, revealing their aromatic complexity after a few years in bottle.
