12° Brix: The supermarket ceiling, but our baseline. ⚙️🍈
In commercial agriculture, hitting 12° Brix is considered a win. Most commercial melons are harvested early at 9°–10° Brix so they survive shipping, sacrificing natural sugar accumulation.
Because we grow in a climate-controlled greenhouse and harvest directly on the vine, our fruit ripens fully before clipping:
1. At 12° Brix: Fructose and sucrose levels are fully developed, giving a rich, sweet bite right to the rind.
2. At >14° Brix: The sugar density changes the texture completely, creating that signature Japanese luxury mouthfeel.
Our recent harvest tested between 12.4° and 13.3° Brix—a solid baseline. Now the mission is engineering the remaining 1% to reach >14°. 🔬🍈
