广式叉烧主要分为蜜汁叉烧和脆皮叉烧。 蜜汁叉烧，意即在烧烤之后再淋上一层糖浆的叉烧。肥师傅坚持要以‘蜜汁叉烧’而非‘色素叉烧’配云吞面。原来一块叉烧，已经是一门深厚的哲学，每一个细节都是技艺。
