我以前也不相信冷冻食材。

直到有一次去朋友开的餐厅，他后巷堆满冰柜。
我问他：冷冻的，客人吃得出来吗？

他笑笑，从冰柜拿了一包冷冻玉米粒给我看。
「你自己吃，看跟新鲜的差多少。」

我吃了。老实说，我分不出。

后来我才知道：
冷冻玉米粒是在玉米最甜的时候摘下来、几分钟内急冻锁住的。
比那些在菜市场放了一天的所谓「新鲜」玉米，更甜。

冷冻食材不是「不新鲜」，
只是你以为的新鲜，很多时候是错觉。

我小时候学校假期最记得的，
不是去哪里玩，是我妈那句「整天在家，不如出去吃。」

她就带我去那间有炸雪糕的咖啡店。

小孩子哪里懂什么 fine dining，
炸雪糕就是全世界最好吃的东西。

现在我做了这行，才发现——
