Chocolate Lamington Mini Cakes
INGREDIENTS

• 2 cups cake flour
• 6 eggs
• 1 cup white sugar
• 4 Tbsp vegetable oil
• 1 Tsp baking powder
• 1 Tbsp vanilla essence
• 1/4 salt
• 2 Cups desiccated coconut (For coating)

INSTRUCTIONS

* In a large bowl add the eggs and sugar. Beat until they become soft and fluffy.

* Mix in the oil and vanilla.

* Add the flour and baking powder, then gently fold everything together.

* Pour the batter (mixture) in a prepared baking square pan.

* Bake for 30 minutes at 160•C or until thoroughly baked.

* When the cake has completely cooled, cut it into squares of equal size.

* Dip each slice in the chocolate syrup. Coat with desiccated coconut.

* Cut in half, then top with whipped cream. (Optional)

!! Chocolate syrup is homemade. I would share its recipe per request.

Plain scones
INGREDIENTS

• 3 cups All purpose flour
• 175g butter
• 3/4 milk
• 5 Tbsp white sugar
• 1 egg
• 1 Tbsp baking powder
• 1 tsp vanilla
• 1/4 tsp salt
!!! Butter, milk and egg must be cold.

INSTRUCTIONS

* Sift the flour, baking powder, sugar, and salt into a large bowl.

* Add the cold butter and work it in using the tips of your fingers to create a sand-like texture.

* Add the egg, vanilla, and cold milk, and then carefully combine the dry ingredients and wet ingredients.

* Spread the dough out on a surface dusted with flour. Use your hands to gently bring it together.

* To cut out the dough, use a round cookie cutter.

* Brush a little milk or egg white on each piece of dough.

Bake for 25 minutes or until the top is slightly golden brown.

Coca-Cola Cake (Eggless cake)
INGREDIENTS

• 1 & 1/3 cup cake flour
• 1 Cup Coca-Cola
• 3/4 cup white sugar
• 1/2 cup milk
• 1/3 vegetable oil
• 1/4 cup cocoa powder
• 1 tsp vanilla essence
• 2 Tsp white vinegar
• 1 Tsp baking powder
• 1/2 Tsp bicarbonate of soda
• 1/4 Tsp salt

INSTRUCTIONS

* Add the milk, vinegar, oil, and vanilla to a big bowl. Add sugar, and whisk.

* Add the salt, baking soda, baking powder, cocoa powder, and flour, then mix.

* Add Coca-Cola and combine thoroughly. If its too thin add 1/4 cup flour.

* In a cake pan that has been prepared, pour the batter or mixture.

* Bake for 40 minutes at 160•C or until thoroughly baked.

Jam tart biscuits
INGREDIENTS

• 4 cups all purpose flour
• 1/2 cup corn flour
• 1 cup icing sugar
• 250g butter
• 1 Tbsp vanilla essence
• 2 eggs
• 1 Tsp salt

INSTRUCTIONS

* In a bowl beat butter and Icing sugar together until smooth, creamy and white.

* Mix in eggs, one at a time. Add vanilla then mix.

* Sift in flour, corn flour and salt. Combine ingredients together until well mixed. (If its too soft add 1/2 cup flour).

* Take dough in small size. Roll it into a ball and place them on a prepared baking pan/tray.

* Use the back of a 1/2Tsp to gently press On the rolled dough to make a hole.

* Fill the holes with any Jam type of your choice.

* Bake in a preheated oven at 180•C for 15 to 20 minutes.

INGREDIENTS

• 2 cups flour (all purpose/ wheat flour
• 175g cup melted butter
• 1/2 & 1/4 cup brown sugar
• 2 duck eggs
• 1/2 cup buttermilk
• 1 Tbsp cinnamon powder
• 1 Tbsp vanilla essence
• 1/4 salt
• 1/2 teaspoon bicarbonate of soda
• 1/4 cup raisins (optional)

INSTRUCTIONS

* Add butter and sugar to a larger bowl, then thoroughly combine.

* Stir in vanilla and buttermilk. After that, add one egg at a time.

* Mix in the flour, cinnamon powder, bicarbonate of soda, and salt.

* Spoon the batter (mixture) into the prepared baking dish.

* Bake in a preheated oven at 180•C for 30 minutes, or until thoroughly baked.

* Sprinkle some cinnamon sugar on top while the food is still warm from the oven. Cut it into equal rectangles or any shape of your choice after letting it cool.

!! I mixed 1 Tbsp castor sugar and 1 Tspn Cinnamon to sprinkle on top.

Ginger-Lemon scones
INGREDIENTS

• 4 cups all purpose Flour
• 190g butter
• 10 Tbsp cold yogurt
• 6 Tbsp cold lemon juice
• 4 tbsp white sugar
• 4 tbsp brown sugar
• 1 egg
• 4 tsp baking powder
• 1/4 Tsp baking soda
• 4 Tbsp lemon zest
• 1 Tbsp cinnamon powder
• 4 Tbsp ginger powder
• 1/4 tsp salt

INSTRUCTIONS

* Combine the flour, baking powder, ginger, cinnamon, sugar, bicarbonate of soda, salt, and lemon zest in a large bowl.

* Add the cold butter. With your fingertip, mix the butter until you get a crumbly (sand-like) texture.

* Whisk the yogurt, lemon juice, and egg in a separate bowl. Then pour into the combined dry ingredients.

* Combine the dry ingredients with the liquid ones.

* Lightly dust your work surface with flour. Bring the dough gently together after transferring it to the work surface.

* Use a round cookie cutter or any cutter of your choice to cut the dough.

* Bake for 25 minutes, or until the top is just beginning to turn brown.

* I brushed the top with 1 Tbsp of yogurt and 1 Tbsp of lemon juice.

Note:! If your ginger is too strong, adjust it to 2 or 3 Tbsp. Scones must have a little height, so don’t overdo your dough.

Ginger lovers, this is a must try!
