Ginger-Lemon scones
INGREDIENTS
• 4 cups all purpose Flour
• 190g butter
• 10 Tbsp cold yogurt
• 6 Tbsp cold lemon juice
• 4 tbsp white sugar
• 4 tbsp brown sugar
• 1 egg
• 4 tsp baking powder
• 1/4 Tsp baking soda
• 4 Tbsp lemon zest
• 1 Tbsp cinnamon powder
• 4 Tbsp ginger powder
• 1/4 tsp salt
INSTRUCTIONS
* Combine the flour, baking powder, ginger, cinnamon, sugar, bicarbonate of soda, salt, and lemon zest in a large bowl.
* Add the cold butter. With your fingertip, mix the butter until you get a crumbly (sand-like) texture.
* Whisk the yogurt, lemon juice, and egg in a separate bowl. Then pour into the combined dry ingredients.
* Combine the dry ingredients with the liquid ones.
* Lightly dust your work surface with flour. Bring the dough gently together after transferring it to the work surface.
* Use a round cookie cutter or any cutter of your choice to cut the dough.
* Bake for 25 minutes, or until the top is just beginning to turn brown.
* I brushed the top with 1 Tbsp of yogurt and 1 Tbsp of lemon juice.
Note:! If your ginger is too strong, adjust it to 2 or 3 Tbsp. Scones must have a little height, so don’t overdo your dough.
