Crispy Chicken Spring Rolls
Ingredients
For the filling
* 250 g minced chicken
* 2 cups shredded cabbage
* 1 medium carrot, grated
* 1 small green bell pepper, thinly sliced
* 1 small onion, finely chopped
* 2 cloves garlic, minced
* 1 tbsp vegetable oil
* 1 tbsp soy sauce
* ½ tsp curry powder
* ½ tsp black pepper
* Salt to taste
For wrapping and frying
* 12–15 spring roll wrappers
* 2 tbsp all-purpose flour
* 3 tbsp water (for sealing)
* Vegetable oil, for deep-frying
Steps
1. Prepare the filling: Wash and shred the cabbage, grate the carrot, slice the green pepper and chop the onion.
2. Cook the chicken: Heat 1 tablespoon of vegetable oil in a frying pan. Add the onion and garlic and sauté for about 1 minute. Add the minced chicken and cook until no longer pink, breaking it apart as it cooks.
3. Add the vegetables: Add the cabbage, carrot and green pepper. Stir-fry for 2–3 minutes until slightly softened but still crisp.
4. Season the filling: Add the soy sauce, curry powder, black pepper and salt. Stir well and cook until the mixture is fairly dry. Remove from the heat and allow it to cool completely.
5. Prepare the sealing paste: Mix the flour and water in a small bowl to form a smooth, thick paste.
6. Fill the wrappers: Place one spring roll wrapper on a clean surface with a corner pointing towards you. Spoon 1–2 tablespoons of filling near the bottom corner, leaving space at the edges.
7. Roll the spring rolls: Fold the bottom corner over the filling. Fold both side corners inward, then roll tightly towards the opposite corner. Brush the final edge with the flour paste and seal firmly.
8. Heat the oil: Heat vegetable oil in a deep pan to approximately 170–175°C (340–350°F).
9. Fry until golden: Carefully place the spring rolls into the hot oil in batches. Fry for 4–6 minutes, turning occasionally, until crisp and golden brown.
10. Drain and serve: Remove with a slotted spoon and drain on a wire rack or paper towels. Serve hot with sweet chilli sauce or your favourite dipping sauce.
Tips for crispy spring rolls
* Allow the filling to cool completely before wrapping.
* Keep the filling relatively dry to prevent soggy wrappers.
* Roll tightly and seal the edges properly to prevent oil from entering.
* Avoid overcrowding the pan, as this lowers the oil temperature.
* For extra crispiness, maintain the oil temperature throughout frying.
