SPECIAL ADDRESS IN COMMEMORATION OF THE 2025 INTERNATIONAL WORLD CHEFS DAY BY THE NATIONAL PRESIDENT, ASSOCIATION OF PROFESSIONAL CHEFS NIGERIA CHEF PAULINUS OKON

Great Nigerian Chefs,

I am honored to address you today as we celebrate International Chefs Day, This year's theme, "Food Explorers," resonates deeply with our mission to promote culinary enlightenment, professional excellence and contribute to a sustainable and safe food system.

As chefs, we play a vital role in shaping food culture and promoting sustainable practices. We must work together to address pressing issues like food insecurity, climate change, and malnutrition.
It is important that we purge negative energies from our mist.
Instead of Superiority contest and drag down syndrome, we could grow together giving helping hands without bullying pride. arrogance etc.

Nigeria faces significant food security challenges, with many citizens lacking access to nutritious food. Climate change, conflict, and economic instability exacerbate these challenges. As chefs, we can contribute to solutions by promoting local food systems, reducing food waste, and supporting sustainable agriculture.

Sustainable food systems are crucial for ensuring food security and promoting healthy diets. We must prioritize local food production, support small-scale farmers, and reduce food waste. By working together, we can create a more equitable and sustainable food system.

We must work with our governments agencies to sanitize the profession, stamp out quacks and unprofessional behaviors while upgrading the standard from what it used to be.
Gone are the days where just anybody could open a Patient Medicine Store without any medical training or professional background so likewise, gone are the days where the Culinary profession was regarded as a craft for the less privileged, poor or school dropouts.
The Association of Professional Chefs Nigeria has commenced the advocacy for the professional degree courses to be introduced in our Universities and we have received positive assurance from our agencies in that regard.

To our members, I urge you to continue promoting culinary excellence and sustainable practices. To young Nigerians, I encourage you to join the Association and contribute to shaping Nigeria's culinary industry.
To government agencies and stakeholders, I call on you to support our efforts and work together to achieve the reform that the culinary profession is long overdue for.

In conclusion, I want to thank our committed members for constantly taking part in our upgrade training and competitions.
I want to appreciate the support of our agencies, the Nigerian Tourism Development Authority (NTDA), the National Institute for Hospitality and Tourism (NIHOTOUR) and the National Council for Arts and Culture (NCAC) for the collaborations and encouragements. Let's continue to work hand in hand to promote sustainable food systems, support local farmers, and reduce food waste. Together, we can create a brighter future for Nigeria and the world as good explorers.

Since our inception in 2011, we have worked tirelessly to train, educate, and groom professionals in the industry.

Chef Paulinus: Despite our extensive awareness campaigns, there are still individuals and organizations unaware of APCN's existence. Partnering with the festival provides an opportunity for us to reach a broader audience, create awareness about our mission, and attract potential members.

How will you showcase Nigerian cuisine at the festival?

Chef Paulinus: We are excited to showcase the rich and diverse traditional cuisines of all six geopolitical zones of Nigeria at the festival. This is a deliberate effort to promote Nigeria's vibrant food culture and give attendees a taste of our country's incredible culinary heritage. By bringing together expert chefs from different regions, we aim to highlight the unique flavors, ingredients, and cooking techniques that define each zone's cuisine. From the spicy flavors of the South-South to the hearty stews of the North, and from the seafood-rich dishes of the coastal regions to the flavorful suya of the Middle Belt, our culinary exhibition will be a true reflection of Nigeria's diverse and rich gastronomic traditions.

After a sweeping win of several medals in various culinary competitions at the West African Food Festival (WAFFEST) Ghana 2025 held in the city of Accra, Ghana from the 21st to 27th September, 2025, the Association of Professional Chefs Nigeria will again be leading a powerful delegation of Nigeria's culinary experts to Burkina Faso to represent the country as Special Guest African Country.

The Burkina Faso Chefs Association have always been close allies with the Nigerian Chefs Association sharing culinary skills and cultural exchange since 2023.
This mutual friendship took twelve delegates from Burkina Faso to Lagos Nigeria in August 2023 where the ties of the White Jacket were cemented.

Come October 25th 2025, Ouagadougou will be welcoming the team from Nigeria as a Special Day has been set aside as Nigeria Special Day during the Burkina Faso CIGAF 2025.
