Episode 3 — The Part I Never Told You… 🍛✨
While I was preparing for The Gang reality show, I was also quietly preparing for something bigger — a whole transition I didn’t fully understand myself.

Between losing my phone, rebuilding my contacts, working, studying, and trying to keep Judy’s Kitchen alive… I was also processing the fact that I was about to leave everything familiar behind.
Nigeria. Abuja. My restaurant. My people.

Some days I cooked to stay grounded.
Some days I cooked to stay sane.
Some days I cooked because it was the only thing that made me feel like myself.

This plate you’re looking at is not just about the hot deliciousness of the fried rice and chicken it’s a clear reminder of how far I’ve come, the risks I took, and the passion that followed me into a new country, a new chapter, a new life.

Today, I tried out something brand new — a spicy, aromatic potato stir made with Dense Kitchen spices, fresh herbs, and of course that final Nigerian touch with pumpkin leaf. 🌶️🌿Every bite came out buttery, peppery, and irresistibly rich. Smothered Chicken with Mushroom, Bacon, and Spinach

Indulge in this rich and savory dish, perfect for a special occasion or a cozy night in.

Ingredients:

•⁠ ⁠4 boneless, skinless chicken breasts
•⁠ ⁠Salt and pepper, to taste
•⁠ ⁠1 tbsp olive oil
•⁠ ⁠6 slices bacon, chopped
•⁠ ⁠8 oz mushrooms, sliced
•⁠ ⁠1 cup heavy cream
•⁠ ⁠1/2 cup grated Parmesan cheese
•⁠ ⁠2 cups fresh spinach
•⁠ ⁠1 tsp garlic powder
•⁠ ⁠1 tsp onion powder

Instructions:

Step 1: Cook Chicken
Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through (6-8 minutes per side). Set aside.

Step 2: Crisp Bacon
Cook chopped bacon in the same skillet until crispy. Remove and drain on paper towels.

Step 3: Sauté Mushrooms
Add sliced mushrooms to the skillet and cook until tender (5 minutes).

Step 4: Create Creamy Sauce
Reduce heat to low. Add heavy cream and Parmesan cheese, stirring until cheese melts and sauce thickens.

Step 5: Add Spinach and Spices
Stir in fresh spinach and cook until wilted. Add garlic powder and onion powder, mixing well.

Step 6: Combine and Simmer
Return chicken to the skillet, spooning sauce over the top. Sprinkle with cooked bacon and simmer for 5 minutes.

Tips and Variations:

Philly Cheesesteak Meatloaf

Ingredients 🛒

1 1/2 lbs ground beef
1 cup breadcrumbs
1 large egg
1/2 cup milk
1 onion, finely chopped
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp salt
1/2 tsp black pepper
1 tsp dried oregano
1 1/2 cups shredded provolone or mozzarella cheese, divided
1 tbsp butter
1 tbsp olive oil
Fresh parsley, chopped (for garnish)

Directions 🍴

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

Sauté the veggies: In a large skillet, heat the butter and olive oil over medium heat. Add the onions, red bell pepper, green bell pepper, and garlic. Sauté until softened, about 5 minutes. Set aside to cool slightly.

Prepare the meatloaf mixture: In a large bowl, combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, salt, black pepper, and oregano. Add the sautéed veggies and 1 cup of shredded cheese. Mix until well combined.

Shape and bake: Transfer the meat mixture into the prepared loaf pan, pressing it down evenly. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).

Add the cheese: Remove the meatloaf from the oven and sprinkle the remaining 1/2 cup of shredded cheese on top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped parsley and serve hot with your favorite sides.
