These are common feedbacks/complaints I get from customers after observing their pure honey go through the process of crystallisation.
Crystallisation of honey remains one of the way to ascertain that your honey is unprocessed, unheated, undiluted, pure and alive.
Yes, your honey contains sugars (glucose and fructose) but in their natural forms. Glucose is insoluble in water and then forms crystals (the part people thought is granulated sugar).
Partial or total crystallisation depends on the proportion of glucose and fructose in the honey amongst some other factors.

Some honeys form fine crystals that swim around in the liquid honey. Other honeys form heavier, denser crystals which sink to the bottom separating the honey into two layers.

Honey with a high pollen content crystallises quicker, forming dense crystals. This is because as the natural glucose in the honey begins to crystallise it latches onto the pollen and begins to clump around it.

These honeys tend to be set or solid at room temperature.

So speedy crystallisation is sometimes proof that the honey is raw and unprocessed.
