MOI-MOI RECIPE

Ingredients:
Beans (white)
Fresh Chilli Pepper
Spring Onions (now in season 😋)
Fresh Fish
Crayfish (grounded)
Bouillon Cubes (I used Gino Max & Knorr chicken)
Sardine
Dried Garlic (Grind together with the seasoning cubes)
Salt to taste
Leftover goatmeat stew

Procedure:
Remove dirt and stone from beans, soak for some minute.

Wash and peel back, change the water from time to time.

Separate the chafe from the beans, wash your Fresh Chilli Pepper , Slice Onions and blend with washed beans.

Pour paste into a bowl and add leftover goat meat stew, seasoning cubes mixture, sardine, salt to taste, grounded crayfish, deboned boiled fish and turn very well.

Grease your tin plate, mug, moimoi pouch with oil in it, if you're using one and pour in your beans puree then cover.

Place purèe in the pot of already boiled water, cover and cooked for 40-45mins. Check to make sure it to your taste, bring down and serve hot . You can choose to use tin, leaf or nylon.
ENJOY with pap, bread, rice or garrri.

OKRO SOUP 🍲 😋

Okro soup is one of the easiest nigerian soups,its quick to prepare and once your done cutting the vegetables, the soup is ready in no time

Ingredients
Okro 200g
Beef
Fish(Titus/mackerel, dry fish and stock fish)
Prawns(optional)
Snail
Red oil(palm oil) 2 cooking spoon
pepper
onion (one medium size)
Pumkin or spinach
Crayfish
Salt and seasoning

Directions
1.An hour before preparation of soup, boil the stock fish and the dry fish for 20mins and leave to soak for some time.
2.Grate the okra , you can cut but i prefer the grating because the tinnier the cut the more it will draw.
3.If you prefer the pumkin , wash and cut into tiny pieces, for places you can only get spinach, defroze and cut into pieces
4.Ground the crayfish and pepper
5.Add the beef, onion and the seasonings to the stockfish and cook till done.
6.Add the red oil and melt if its congealed,start frying the grate okra to start the drawing process, add meat stock bit by bit and make sure this frying do not exceed 5mins to avoid over cooking the okra.
7.Add the vegetables, crayfish, pepper, the cooked meat and stockfish , salt to taste. Then stir very well . Leave to cook for few minutes and its ready
8.You can serve with cassava fufu, pounded yam, or semolina. Or Garri🤭

EWEDU SOUP (Yoruba)
Ingredients
1 big bunch Ewedu leaves
2 tablespoons Dawa-dawa (Locust beans)
½ tablespoon potash
Salt to taste
2 cubes star magi or 1 bouillon cube
1 tablespoon ground crayfish
1 to 2 cups of Water
2 ½ tablespoons ground egusi

Procedure
Pick your ewedu leaves properly, making sure you dont pick the stalk/stem along with it.
Wash it thoroughly to ride it off dirt. Pour water in a sauce pan, add the ewedu leaves, locust beans, potash and bring on heat to boil by rolling.
Blend, grind or pound your ewedu with broom if you are using broom.
Please, avoid too much water because it will affect the viscosity.
Transfer the edwedu back to your clean pot.
Add the ground crayfish, egusi, seasoning cube and salt to taste.
Cook till done.

EWEDU STEW (YORUBA)
Ingredients
6 Shombo pepper
15 Fresh tomato
½ kilo goat meat
6 Cow skin
5 pieces Beef
2 tablespoon Crayfish
2 bell Tatashe pepper
5 pieces Fresh scotch bonnet pepper
1 dry fish Dried fish
2 cooking spoons Palm oil
1 big Onion bulb
Salt to taste
6 cubes magi

Procedure
Wash and ground fresh scotch bonnet pepper, tomatoes, shombo & tatashe together. Pour in a sauce pan and place on heat to dry water out.
Season all the meat, and cook.
Add dry fish and cook till done.
Heat clean pot to hot add palm oil
Allow it to hot, add onions allow it to suet and add fresh tomatoes, as well as the cooked meats and cook.
Add all the remaining ingredients and cook until done. Taste for seasoning and bring down.
Your stew is ready, serve with Amala, ghegiri & Ewedu

BEANS SOUP (GBEGIRRI)

Ingredients
2 cups Beans ( black eye)
3 seasoning cubes
Salt to taste
Pepper to taste
3 cooking spoons Palm oil
2 tablespoons crayfish

PROCEDURE
Soak the beans in the water and start peeling off the body immediately
Wash out the shaft and keep aside.
Pour the washed beans in a clean pot and cook until done.
When it is done, mash it to sauce paste or pour in blender and blend.

Simple fried rice recipe
Ingredients
2 cups of parboiled rice
1cup of mix vegetables
1/2 cup of cut green onions
1 small onion
3 cloves of garlic
2 slices of ginger (blend garlic and ginger together)
vegetable oil
Meat seasoning,
1/2 tsp salt
1/2 tsp garlic powder and paprika
1/2 tsp black pepper
1/2 tbsp. oil
mix together and let it rest for 30 minutes
Rice seasoning,
1 tsp salt
1 tsp chicken stock
1 tsp onion powder
1 tsp curry powder

How to make meat pie.
Recipe
For the dough
* Flour. 1kg
*Butter. 500g
*Water
*Salt Pinch
*Baking powder 1teaspoon.

Procedure
* Put your flour in a mixing bowl, add baking powder and salt. Melt your butter (to soften the butter), add it to the flour ,mix well and add water ,mix it thoroughly to get your dough.
Note: The dough should not too soft.

For the filling
* Meat
*Carrot ( Cut into tiny sizes)
*Irish potato( Cut into tiny sizes)
*Onion ( Slice )
*Maggi
*Curry
*Thyme
*Salt( To taste)
* Green peas
*Vegetable oil

Procedure
*Fry your onions with just a half cooking spoon of vegetable oil, then add meat, seasoning ( maggi).
Stir it up for like 10 minutes till it changes colour and look cooked.
* Add a little water,then add carrot ,green peas,potatoes ,curry, thyme, salt and cover the pot to get cooked.
* Set aside when done to cool before rolling your dough.
(Note:- The filling should not be watery).

Make your Meat pie
*Lightly flour your
working area and turn the dough onto it. Roll the
dough out into a large flat, thin circle.
*Preheat oven to 180 degrees Celsius. Line a
baking sheet with baking paper and lightly grease
it.
* Take a saucer and use it to cut out circles from
the dough. Dab some water around the edges of
the circles using your finger. This is to help seal
the pie when you’ve put the filling.
* Take the cooled filling and spoon some onto the
half side of the circle. Pull the other half over to
close the pie and place it onto the prepared
baking sheet.
*Repeat process until all the dough is used up.
Decorate the edges of each pie with a fork by
gently pressing on them. Cut a small slit in the
middle of each pie to create an air vent which is
needed to let the steam out when the pies are
baking.
* Lightly brush each pie with a beaten egg. Bake
in preheated oven for 25-30 mins or until the pies
are golden brown. Enjoy!

HOW TO MAKE KUNU AYA (TIGER NUT DRINK)

Ingredients:

• 2 cups of Tiger Nuts (Dried or Fresh)

• 1 medium Ginger

• 10 Dates (Or less)

• 1 Coconut (Crack the shell and extract the flesh for blending)

Directions:

Step 1:
Soak the tiger nuts in clean water Overnight (if you are using the dry tigernuts)

Step 2:
Rinse the soaked tigernuts and place in a blender.
- Remove the seeds from the dates, wash and place in the blender.
- Peel and pour your diced coconut in the blender as well then add the skinned ginger, a little water or the coconut water and blend smooth.

Step 3:
With a Pap/Cheese cloth, strain the milk into a bowl.
-The first milk strained would be thick then you place the chaff back into the blender, add some more water, blend & strain again till the whole milk is extracted.
(Don't make the kunu aya too light for a better taste)

Step 4:
Place the extracted milk drink in a refrigerator to chill up.

Step 5:
Serve cold😊
