SWISS MERINGUE BUTTER CREAM

RECIPE:
Butter 2satchet
Egg whites 5eggs
Granulated sugar 11/2 cup
Salt pinch ( if you're not using salted butter)
Vanilla essence 1tsp

PREPARATION:

Using a double broiler. Boil about 2 cups of water in a medium-sized pot.
In a glass bowl( or any bowl that can withstand heat) add the egg whites + sugar. Give it a mix and place on the pot to steamed heat the egg mixture.
Lower the heat to a simmer, stir occasionally gently till all the sugar granules completely melt and smoothens.
Off the heat, pour down the mixture into a mixing bowl and whisk at high speed until the mixture is at room temperature.
Whilst its mixing, add the butter piece by piece till completely even and incorporated. Also add the vanilla essence.
Continue whisking for about 20 more min after to set a smooth and silky frosting.

There, icing cream using egg white. Enjoy!!!

RECIPE FOR STIFF BUTTER CREAM

Butter 1/2cup butter
Milk 2tablespoon
Icing sugar 2cups
Vanilla essence 1/2 tablespoon

PREPARATION:
In a bowl, seived 2 cups of icing sugar. Set aside.
In another chilled bowl, using a mixer or a hand mixer beat butter at low speed till pale and soft.
Scrape the sides,and continue beating till fluffy. Add half of the icing sugar to the butter and mix till completely even.
Scrape sides again and add vanilla extract with the remaining icing sugar.
Give it a mix again for few minutes till completely smooth. Add 2tsp of milk for more smoothness and beat again till soft peeked reached.

Done, there you have a stiff butter cream. Enjoy!!!
