This year will be the 3rd year of our experiment to see how time and light affect the nature of honey (see previous posts to follow the progress). In the 1st pic, from the right, we have the test tube with honey that was exposed to sunlight everyday for the past three years. In the middle, the 2nd test tube, is the honey kept indoors for the same period of time, and the third is the honey kept in the dark in a closed box.
So it can be seen that 2nd and 3rd have crystallised heavily, and there is no discernible difference in their colours. The 1st, that has been exposed to sunlight, however is now darker than rest, and there is no crystallisation detected.
Also compared to when the honey was first harvested (as could be seen from the 1st post in 2023) , all three have darkened
So we could say time is a factor in the darkening honey, and exposure to sun light causes honey to darken faster. Also the likelihood of crystallisation increases the longer honey stays.
