Moving on from green leafy vegetables. We have other vegetables, some of which we see around us like peppers, carrots, cucumbers, tomatoes, cabbage, lettuce, broccoli, cauliflower, kale, spinach, okra, beetroot, onions, garlic, mushroom, corn etc....in all shapes, sizes and colours. Most are easily accessible and affordable while some others are not.
They are all loaded with essential vitamins and minerals that the body needs. Some contain oils, while others contain carbohydrates. There are those that contain proteins too. All the classes of food are found in vegetables! What a blessing!!!

PS. Do you know that tomatoes are considered as fruits by some? Go figure! 🧐

Why You Need Leafy Green Vegetables.
I promised to tell you why in my next post and I am keeping my promise.
I recollect those good old days when we would make a sauce of palm oil, salt and fresh pepper to go with freshly picked, thoroughly washed, juicy akwỄkwį» aƱala ( garden egg leaves). We would gather round the large tray and have a feast. You just pick some leaves, fold them up, dip in the sauce and enjoy.
On some other days, we would prepare the garden egg leaves like abacha without the abacha itself. We really ate very healthy then.
Back to the matter at hand, do you know that leafy green vegetables contain a good number of essential vitamins and minerals?
Vitamins like A, B1, B2, B3, B5, B6, C, E, K, Beta Carotene and Folate.
Minerals like Magnesium, Iron, Phosphorus, Zinc, Calcium and Potassium.
Vitamins and minerals are essential for helping our bodies function properly. Some of them are helping to fight infections, keeping our bones strong, helping wounds to heal, maintaining body pH balance and regulating hormones.
I hope you see why leafy green vegetables are a must in your diet.

Growing up in the eastern part of Nigeria, in Anambra State precisely, eating leafy greens was a given. There is hardly any meal prepared without green leafy vegetables especially in the rainy season. Most households had farms and or gardens where these greens are cultivated. We had variety too, ugu (pumpkin leaves) green (spinach), arira ( jute leaves), mgbolodi ( water leaf), eliamionu( soko in Yoruba language), į»ra, akwỄkwį» anala (garden egg leaves) and a host of others. They were prepared in various ways and enjoyed thoroughly by everyone, young and old. Need I add that there was no genetic engineering and other forms of enhancing production as at then. They were purely organic! The good old days!
What do these greens have in common? Chlorophyll, which is what gives plants their green colour and helps them create their own food through photosynthesis ( chai, I know book small ).

It has been quite a long while. Well life challenges happen. All we need do is navigate it as well as we can trusting and believing God to see us through. Trust all is well with you.
