Black soup is of different varieties in Nigeria even if they are more similar than not. The Yoruba people have theirs and the Edo’s have theirs. The soup is a relatively popular one in western Nigeria and unique from other Nigerian soups because of its dark color.
However, black soup isn’t literally black in color, as you would presume from the name. It simply has a dark color unlike other Nigerian soups and the color is due to the vegetables used. Nevertheless, it’s still one of Nigeria’s best soups out of the west.

HOW TO PREPARE BLACK SOUP...
The ingredients you need to prepare black soup with banga include:
Bitter leaf
Uziza leaf
Scent leaves
Grounded crayfish
Palm nut cream. It is possible to buy pre-made palm nut cream or extract it from fresh banga yourself. You won’t need a lot of palm nut cream either way.
Assorted meat. You can use beef, goat meat, shaki, or ponmo in this recipe
Smoked fish
Cayenne pepper
Seasoning cubes
Onions
Salt to taste
Essentially, black soup is produced by combining three vegetables. The bitter leaf, uziza, and scent leaves are the vegetables in this situation. While it is not necessary to utilize all three leaves in equal amounts, it is best to avoid one leaf overshadowing the others.
Preparing black soup with banga isn’t different from how you prepare other types of black soup. The only thing is that the banga is a must-have ingredient while you can cook other types of black soup with or without banga. Here are the cooking facts to note:

Cooking Time: 35 to 40 minutes
Total Time: 60 to 70 minutes
PRECOOKING INSTRUCTIONS
You should have all of your ingredients ready before you begin cooking your soup. Begin by blending your scent leaves and uziza leaves. Blend your bitter leaves separately. Blending your bitter leaves separately from other veggies will ensure that the bitter taste doesn’t affect them.
Following that, slice your onions and thoroughly wash your meats and smoked fish. Additionally, if not previously done, debone your smoked fish. If you can’t get palm nut cream for your banga. Here’s how to extract the cream if you have fresh palm nuts (banga):
Wash the palm fruits and place them in a pot with enough water
Boil the palm fruit over high heat until it is soft; at the top of the pot, there should be a thin film of oil. Also, the palm nut flesh will easily break open when you press with your fingers
Boil hot water in a different pot
Drain the palm fruit and place it into a mortar
Pound gently with a pestle until the flesh is separated from the shell
Pour into a big bowl and pour in the hot water you boiled. Use caution when adding hot water because you will need to boil the extract to get it to the right consistency for your recipe.
Use a sieve to separate the extract from the fibre. You should do this multiple times to remove as much extract from the fibre as you can
After about 5 minutes, pour the extract into another pot, being careful not to spill any
Boil to the desired consistency
That’s it, you have your palm nut cream for your black soup with banga.
COOKING INSTRUCTIONS
After completing the pre-cooking instructions, follow the steps below to cook black soup with banga
Place your cooking pot on the stove or the gas burner and add your meat. Toss in the onions, water, pepper, and salt. Reduce the heat to medium-low and begin steaming.
Add the palm nut cream and smoked fish once the meat has softened. Allow 8 to 10 minutes for the pot to cook.
At this stage, your soup should be thickening. After that, add your blended leaves and stir well.
Taste the meat to see if the seasoning used for steaming it is sufficient. If not, season to taste with extra salt, pepper, etc.
Allow for a few minutes of cooking and simmering then, add your cayenne pepper and crayfish
Allow the pot to continue to boil and simmer for another 5 minutes.
Take your pot down as your soup is ready
