✨Chicken Curry Recipe! 🍗🍛
🫚Ingredients:
• 3 tbsp vegetable oil or coconut oil
• 1 tsp The Spice Monē’s Mustard Seeds
• 1 bay leaf
• 2-inch cinnamon stick
• 3-4 whole cloves
• ½ tsp cumin seeds
• 2 onions, chopped
• 1 tbsp garlic, minced
• 1 tbsp ginger, minced
• 2 tbsp tomato paste
• 1 tbsp coriander powder
• ½ tsp turmeric powder
• ¾ tsp black pepper powder
• 1 tsp Kashmiri chili powder
• 1 tsp paprika
• 1 tsp salt
• ½ tsp fennel seeds
• 2 lbs boneless chicken thighs
• 2 cups potatoes (optional)
• ½ cup hot water
• ½ cup chicken broth
• 1 tbsp cashews or coconut cream (optional)
• 1 tsp garam masala
• ¼ cup chopped cilantro
👩🍳Instructions:
1. Heat 2 tbsp oil in a large pan, and add The Spice Monē’s Mustard Seeds. Cover and let them pop!
2. Add bay leaf, cinnamon, cloves, cumin seeds, and stir in onions, garlic, and ginger. Fry until golden brown (about 20 minutes).
3. Add tomato paste, fry until it separates from the oil (5 mins). Add spices (coriander, turmeric, black pepper, chili powder, paprika, salt, fennel seeds) and cook briefly.
4. Add chicken and potatoes, stirring to coat. Fry until chicken is no longer pink.
5. Pour in hot water and chicken broth, cover, and simmer for 20-30 minutes until chicken is cooked and potatoes are soft.
6. Stir in garam masala, heat through, and garnish with cilantro.
