I loveee all types of COCONUT RICE(plain, fried with veggies, jollof and others) and so I’ve decided to share my own simple, plain and flavorful dish for you to try, while staying safe at home.

Ingredients Used:
🥥 Long-grain Rice (Washed and Parboiled)
🥥Chicken hotdogs and Fried eggs(plain)
🥥Sweetcorn (add some veggies if you desire)
🥥Knorr cubes
🥥White pepper
🥥Thyme,Rosemary and Oregano spices
🥥Coconut milk(homemade, canned or powdered like I used)
🥥Beef or chicken stock
🥥Coconut oil or any other oil you prefer 🥥Onion (chopped into tiny bits)
🥥Scotch bonnet pepper (Rodo)
🥥Garlic and Ginger(grated)
🥥Salt to taste
Method:
🥥Place a large pot on the cooker with some water and tiny salt. Add your washed rice and leave for like 10-15minutes to parboil. Once done, rinse with cold water and set aside in a colander/sieve.
🥥Heat some Coconut oil in the same large pot after cleaning and add the chopped onion, ginger and garlic. Stir-fry for a minute and add your sweetcorn, sausages and plain fried eggs. Add some of the oregano, rosemary thyme and a pinch of salt. Set aside the stir-fried sweetcorn and proteins in a bowl. In the same pot, add your chicken/beef stock, enough coconut milk the other part of your spices/seasoning cubes and allow to boil. 🥥Then add your parboiled rice and leave to cook for about 15-minutes(it’s the steam that will soften it not water, so that it doesn’t stick together)
🥥Lastly, add your stir-fried sweet corn(or other veggies), pepper and proteins. Stir well to combine like I did in the video. Taste and serve with grilled chicken, fish or beef as desired.
