Agege Bread (Dough Bread)

Recipe 1
Ingredients
480g water
150g sugar
15g salt
½ tablespoon vanilla flavor
1 teaspoon white vinegar
½ teaspoon cinnamon powder
10g yeast
1kg flour
80g butter

Procedure
In a large bowl, add all dry ingredients together and sieve .
In another bowl, mix water, flavor, and white vinegar. Stir to combine properly.
Add the liquid ingredients to the flour dry ingredient and mix properly.
Knead in the butter until smooth and elastic. Place in well greased bowl and allow to rise until double in size.
In an 11 4 loaf pan; cut 70g each dough and mold into pan.
Allow to rest and bake in preheated oven until golden brown.

Ingredients
4 ¼ Cups Flour (plus more for dusting)
2 ¼ Teaspoons Yeast
¼ Cup Sugar
1 Cup lukewarm Water (Less or more)
¼ Cup Whole milk
2 Tablespoons Butter
1 Egg
½ teaspoon Salt
½ Teaspoon Ascorbic acid (Vitamin C)
Scalded flour (1 ½ cup water and ¼ cup flour Keep to rest for 30 to 50 minutes)
Procedure
1. Make scalded flour and keep for 10 to 25 minutes.
2. Proof Yeast (In a small bowl, dissolve yeast in warm water, sprinkle a little sugar over it, and set aside for about 5 minutes or until it foams.)
3. Sift flour in a large bowl; add sugar, salt, and vitamin c and mix.
4. Add scalded dough to the dry ingredient. Mix wet ingredients with dry ingredients.
5. Transfer the dough onto a floured surface, scoop in the butter and knead until the dough smoothes and elastic. Or just mix until dough is stretchy and elastic; that's the key to making bread. As a matter of fact, if you don't use egg and milk, but d kneads the dough very well you would get a very good end result.
6. Grease a bowl and place the dough in it. Cover and put in a warm place to rise until it doubled in size.
7. Grease the baking pan and set aside. Bring the dough out.
Deflate the dough and place on a floured surface knead the dough for about 5 minutes.
