Egusi Soup Recipe
Egusi soup is a delicious and hearty Nigerian dish made with ground melon seeds, vegetables, and assorted proteins. Here's a detailed recipe to guide you:
---
Ingredients:
2 cups Egusi (ground melon seeds)
500g assorted meats (beef, goat meat, cow tripe)
1 medium-sized smoked fish (deboned)
1 cup stockfish (pre-soaked)
1 cup ground crayfish
2 cooking spoons palm oil
3 fresh tomatoes or 2 tbsp tomato paste (optional)
3-4 scotch bonnet peppers (blended)
1 medium onion (diced)
4 cups water or meat stock
2 Maggi cubes or seasoning cubes
Salt to taste
1 bunch ugu leaves (fluted pumpkin leaves) or spinach (chopped)
1 bunch bitter leaf (washed thoroughly to reduce bitterness)
---
Preparation Steps:
1. Prepare the Proteins:
Boil the assorted meats with onions, seasoning cubes, and salt until tender.
Add the stockfish and smoked fish halfway through the cooking.
Once done, set aside and reserve the stock.
2. Toast the Egusi (Optional):
Lightly toast the ground egusi in a dry pan for 2-3 minutes to enhance the flavor.
3. Cook the Egusi:
In a large pot, heat palm oil until slightly hot. Add diced onions and fry until translucent.
Add the blended pepper and tomato paste (if using). Fry the mixture until the oil separates from the paste.
4. Incorporate Egusi:
Mix the ground egusi with a small amount of water to form a paste.
Add the paste to the fried pepper mix, stirring continuously to avoid burning. Cook for 5-7 minutes.
5. Add Meat Stock:
Gradually pour the reserved meat stock into the egusi mix while stirring. Allow it to cook on medium heat for 10 minutes.
6. Combine with Proteins:
Add the boiled meats, smoked fish, and stockfish to the pot. Stir well and let it simmer for another 5 minutes.
7. Add Vegetables:
Introduce the chopped ugu or spinach and bitter leaves to the soup.
Stir thoroughly and allow to cook for 3-5 minutes.
8. Season to Taste:
Add ground crayfish, more seasoning cubes, and salt if needed. Adjust spices to your preference.
