STEAK SANDWICH
Serves 2
1 french baguette (use any bread that you like or gluten free), sliced and toasted

1 (8-10 ounce) steak (use whatever cut you have on hand), cooked to your preferred temperature
Sliced aged Manchego cheese (however little or much you like)
2 TBSP Dijon mustard
1-2 TBSP horseradish (this is VERY strong, so if you want a little less bite, use less)
4 fresh figs, sliced (or use a few tablespoons of fig jam)
1 cup wild arugula, dressed with 2 TBSP olive oil and aged balsamic vinegar (make sure you season your greens!)

Assemble your sandwich. I like to finish it with a few more glugs of olive oil and balsamic.
