CAUSA: An Appetizer with a Story. This is the Peruvian appetizer or starter par excellence: a perfect dough of mashed potato made with ají amarillo chili pepper layered with tuna salad, avocado and a slight hint of mayonnaise.
CEVICHE: also cebiche, seviche, or sebiche[3][4] (Spanish pronunciation: [seˈβitʃe]) is a South American seafood dish from the modern day country of Peru, typically made from fresh raw fish cured in fresh citrus juices, most commonly lemon or lime, but historically made with the juice of bitter orange.[5] It is also spiced with ají, chili peppers or other seasonings and chopped onions, salt, and coriander are also added. The name originates from the Quechuan word siwichi, which means fresh or tender fish.
CHICHARRÓN DE PESCADO: Chicharrón de Pescado, for resembling little pieces of crispy fried pork skin. Here, white fish is marinated in a flavorful blend of lemon, garlic and Peruvian yellow peppers.
