Rellenong Bangus
Bangus or Milkfish (scientific name: Chanos Chanos) is a fish found in the shores of the Philippine archipelago. It is said to be the fish that has the most fish bones (214! 🤭). It has a silvery skin, and it's meat has a white tone like milk- therefore it's name "milkfish". Bangus is commonly a farmed fish, many of these fish farms are found along the coast.
The meat has a compact texture and it's taste is not as dominant as a salmon but a little tastier than the Tilapia. In the Philippines, we have many dishes using this very versatile fish. Bangus sa Bayabas, a sour soup using guava as a base. Daing na Bangus, which is marinated in a vinegar sauce then fried.
The Queen of all Bangus dishes is the Rellenong Bangus. With a lot of practice, the meat and bones are removed from the skin and deboned (all 214 of them!!!!). The filling usually is made of the deboned meat, some onions, garlic, tomatoes, and two very unusual ingredients- raisins and pickles. Once the fish has been stuffed, it is fried - a sauce is not necessary for this very tasty dish.
Since Rellenong Bangus is a tedious dish to prepare, it is usually served during the lenten season.
In Germany, it could be difficult to find this fish, but if you happen to have a well-stocked asian supermarket, you most probably find this fish in their frozen section. Look for the label "FisherFarms" to get the triple AAA quality.

DRUMSTICK is not a part of a muscial instrument , but the pod of the plant Moringa oleifera. At home, we would have Moringa, or as we call it, "malunggay" in the form of leaves. The drumsticks though, never made it to our table. It is, i must say, a quite curious ingredient. When fresh, the pod, which could be quite long, could actually be mistaken for a drumstick! Cooked in a stew, or like in this video, it is made into a Sri Lankan curry, the pods become softer, but take note, it still does not make it edible! You only suck the pod and discard the woody part.
Moringa is the modern-day super food. It is filled with a ton of nutrients. It's leaves are used for soups, or dried to make tea, or powdered to add as a food supplement. Gove this humble vegetable a try, it is worth the adventure.
To purchase drumsticks in Europe, go to your next Indian Supermarket. My favorite shop is at Charlottenstrasse in Düsseldorf named Kashmir.

100% Fishballs
Have you wondered, during your "Tohog-Tuhog Days" after school, when you would run to Manong's Fishball Cart, why the fishballs would shrivel up just right after it had been skewered? Well, that is because of the amount of extenders put into the product. The more flour Manong mixes into his batter, the larger the yield. We cannot blame him for that "cheat", he has to make a living, right?
Here is one example of fishballs, made out of 100% Victoria Barsch Filet, each piece weighs exactly 10g raw weight. It is chewey, does not shrivel, and tastes oh so good!!!
