Produced in the highlands of Colombia, these lots from La Aldea showcase the diversity and creativity of modern Colombian processing — combining classic varieties with experimental fermentations and expressive cup profiles.

Carefully harvested at peak ripeness, each lot undergoes distinctive processing methods including anaerobic washed fermentations and yeast inoculations, designed to enhance sweetness, structure, and aromatic complexity while preserving clarity in the cup.

🌟 La Aldea - Tabi (Anaerobic Washed, Pink Bourbon Mosto Yeast Inoculation)
Juicy and layered with orange jam, mixed berries, maple pie sweetness, and a honeyed finish.

Now available at our Warsaw warehouse -From the mountains of Cajamarca, Peru 🇵🇪

Sourced from the hillside farms of La Coipa in San Ignacio, this regional blend is produced by a network of smallholder farmers cultivating coffee between 1,400 and 1,800 m.a.s.l. Cool mountain temperatures and steady rainfall slow cherry maturation, resulting in coffees with vibrant acidity, sweetness, and remarkable clarity.

Carefully harvested at peak ripeness, the cherries undergo traditional washed processing with a 24-hour fermentation, followed by slow drying on African beds inside solar tents for up to 18 days.

The result is a clean and balanced cup profile that reflects the terroir and craftsmanship of Northern Peru.
