I wanted to take a moment to share my amazing experience at Camarat in Amsterdam Noord. I went for dinner and had such a fantastic time! I loved the atmosphere of this place, an industrial-style building connected to the affiliated Chateau Amsterdam, so the whole place smells like a w**ery 😍 .

I got a tour of the w**ery and was fortunate enough to chat with the w**emaker who is trying all sorts of experimental things, which is a massive benefit of being an urban w**ery that doesn't bottle under a PDO. They are blending using grape varieties from different countries and utilizing unexpected combinations (Pinot Noir, Mourvèdre, and Sangiovese all in one bottle!). I tasted a beautiful barrel sample of chardonnay and am particularly looking forward to tasting their organic orange Vermentino which is currently resting in barrel.

You could taste the chef's passion for food in each dish. Everything I tasted was simply excellent; but I want to specifically point out the smoked oysters. As a Baltimorean, perhaps it is sacrilegious of me to enjoy an oyster in any other preparation besides raw 🦪 and shucked on the street, drowned in vinegar and old bay. But this smoked oyster was just SO good. It was smoked over rosemary hay and served in the house-made dashi 😋. Like I said, everything we ate was great, but I can't wait to go back and get these oysters again.

The w**emakers at Artelium mentioned how difficult it was to choose a name for their estate, and they really nailed it with their choice. "Art" 🎨 refers to the latin meaning "human skill or craft" and "ium" refers to a place for gathering 🏟️ (think: stadium, atrium, etc.).

Artelium is a relatively new estate in a relatively new region, with the first vines planted in 2018 (mostly 🍾 Ch*****ne varieties and some pinot gris) on chalk and clay soils (see photo - it had been so hot and dry in the region that the clay was shrinking and creating holes in ground).

Something I'm super excited to taste: as of 2022, 15% of the land is planted with PIWI vines! These disease and fungus-resistant varieties include Souvignier Gris, Sauvignac, Rinot, Pinotin, and Cabaret Noir (which we were playfully told was originally called Cabernet Noir until "someone" had a problem with it 🤣 ). Currently the vines are planted on a variety of sites so the w**emakers can evaluate where they grow best 🌱 .

The w**emaking philosophy at Artelium is to intervene only when necessary. They heavily focus on quality and terroir, making mostly vintage w**es and aiming for a minimum of five years on the lees 🥖 . They also have a focus on sustainability, notably deciding to remove foil from all their packaging despite concerns that the bottles don't look luxury enough.

"Do you want to walk down to the Pinots?" Said Mardi to Simon while leading our little group of w**e educators through the vineyards at Ridgeview. Little did I know, this would be only one of the many catchy and memorable sayings that I would hear during this visit. Also, yes. I do want to walk down to the Pinots 🍇 . They have 7 acres of Pinots (Meunier and Noir, of course) and 7 acres of Chardonnay, farmed sustainably.

Head W**emaker Simon Roberts told us how much his parents loved Ch*****ne and how he was not surprised when they bought vineyard land so they could make their own sparkling w**e. The surprise came in the location: Mike and Christine Roberts bought land in Sussex 🇬🇧 to plant grapes for sparkling w**e! They were some of the pioneers of the region, and now Simon proudly carries on the tradition.

"Sustainability is profitability" is another catchphrase I heard, and it is not just marketing but a philosophy that is incorporated into all the decision-making done on the estate. They focus on making the best of the land and preserving it for the future. Simon was even a founding member of Sustainable W**es of Great Britain, demonstrating his commitment to sustainability.

Alongside their own vineyards, Ridgeview sources grapes from across the region in order to spread risk (frost! ❄️) and capture different microclimates and flavor profiles for more complexity in the w**es. They view the English Sparkling W**e trade as a whole, only as good as the lowest quality. They are advocates for quality and consistency across the region and are certainly leaders regarding quality w**e.

"Life is for Celebrating" is the literal message in a bottle 🍾 , printed on the inside of the foil of their sparkling w**es. And these w**es definitely give a reason to celebrate. Each w**e was beautifully crafted, with my standouts being the 2020 Blanc de Blanc (the only single estate w**e offered: fresh, delicate, complex, made from 32 year old vines) and the 2016 Blanc de Noirs (spent a stunning nine years on the lees 🥖 and was beautifully developed with a dusty note from the Meunier).

There is so much more to say, but these w**es speak for themselves. So do yourself a favor and have a taste!

Summer is coming in the Netherlands!!

Well... maybe? You never really know! A few warm days could be followed by a week of cold rain and hail. So when the sun comes out, its time for a cheese board and a refreshing white w**e to enjoy the weather while it lasts.

Luis Seabra is an artist when it comes to producing w**e. And with w**e, sometimes that means less is more. Luis is a hands-off w**emaker, practicing minimal intervention to produce w**es that are clean and terroir-expressive. The focus is vineyard-specific w**es which is expressed by the w**es that are named after the soils their vines are planted on.

The Xisto Ilimitado is made from a blend of indigenous Portuguese varieties including rabigato, viosinho and gouveio all grown on schist soils. The w**e is bursting with flavors of ripe pear and grapefruit highlighted by a subtle, smoky, flintiness that hints at the schist soils from where they came. This is gorgeously juicy and complex, perfect for a summer afternoon. And it tasted great with everything on the cheese board too!

I'm overjoyed to announce that I've been accepted as a member of the Association of W**e Educators. This organization is a collection of W**e Educators who have some common goals, including:

-To inform, educate and inspire the general public on the subject of w**es
-To provide easy access to well qualified, objective w**e presenters
-To maintain and improve standards of w**e education
-To establish a collective profile as a recognised professional group

I'm so proud to be part of a group that seeks to maintain a high standard of education in the w**e community. This is a great resource for improving teaching skills and sharing educational resources. I am absolutely delighted to be a member and look forward to participating in some great events with this fine group of educators.

One of the things I loved most about my w**e education was learning about food and w**e pairing. You learn the basics, and the rest is testing out different combinations. And since I love to cook, I get to try out a lot of different pairing combos.

As I transition into a more plant-based diet, I've fallen in love with Ottolenghi's Plenty cookbook (and no, this is NOT a paid promotion!). Every recipe I've made has been a huge hit in my house. The meals are meat-free and completely satisfying and delicious. This one is Lemon and Aubergine Risotto which I paired with this refreshing and bright Cirò Bianco. Cirò is a Calabrian region known mostly for red w**es from Galioppo, with some white w**e production dominated by Greco Bianco.

This w**e, produced by Cantina de Luca, is 100% Greco Bianco grown without the use of chemical pesticides or fertilizers. Fermentation takes place in stainless steel resulting in a fresh, aromatic w**e bursting with ripe citrus flavors and subtle floral aromas. It paired amazingly with the risotto, with the fresh acidity cutting through the creaminess of the dish. The lemony w**e was gorgeously flavored with the lemon notes in the dish. 10/10, would pair again!
