🌮 𝐌𝐞𝐱𝐢𝐜𝐚𝐧 𝐁𝐚𝐤𝐞𝐝 𝐓𝐚𝐜𝐨𝐬
Crispy oven-baked tacos filled with seasoned beef, beans, and corn finished with melted cheese and served with fresh toppings for the perfect bite!
🛒 Ingredients (for 8 baked tacos)
1 small onion 🧅
2–3 cloves garlic 🧄
Soilmates Avo 🥑
300 g ground beef 🥩
1 tsp taco seasoning 🌶️
1 tbsp tomato purée 🍅
1 small can corn (drained) 🌽
1 small can kidney beans (drained & rinsed) 🫘
8 small tortillas 🌯
Shredded cheese (Mexican blend or cheddar) 🧀
For serving:
Sour cream or crème fraîche 🥛
Guacamole 🥑
Jalapeños 🌶️
Fresh cilantro 🌿
Lime wedges 🍋
👩🍳 Instructions
1️⃣ Preheat oven to 180°C.
2️⃣ Finely chop the onion and garlic.
3️⃣ Heat a little avocado oil in a pan over medium heat. Sauté onion and garlic until soft and translucent.
4️⃣ Add ground beef and cook for 3–4 minutes, breaking it up with a spoon.
5️⃣ Stir in taco seasoning and tomato purée. Cook for another 3–4 minutes.
6️⃣ Add corn and kidney beans, cook for 2 more minutes, then remove from heat.
7️⃣ Line a baking tray with baking paper and lightly drizzle with avocado oil.
8️⃣ Place a tortilla on the tray, add beef mixture to one half, top with cheese, and fold into a half-moon shape. Press gently. Repeat for all tacos.
9️⃣ Lightly drizzle tops with avocado oil and bake for 12–15 minutes, until golden and crispy.
🔟 Serve with sour cream, guacamole, jalapeños, cilantro, and lime wedges.
