🍓 Strawberry Cheesecake Ice Cream Bars
One last summer treat before back to school. Creamy, fruity, and covered in white chocolate. 🍦

🛒 Ingredients

250 g cream cheese 🧀
150 g Greek yogurt 🥛
35 g honey 🍯
1 tsp vanilla essence 🌼
Zest of ½ lemon 🍋
150 g strawberries, finely diced 🍓
250 g white chocolate 🍫
25-30 g Soilmates Macadamia Oil 🌰

Toppings:
Crushed cookies 🍪
Chopped macadamia nuts or hazelnuts 🌰
Freeze-dried strawberries 🍓

👩‍🍳 Instructions

1️⃣ Mix cream cheese, Greek yogurt, honey, vanilla, and lemon zest until smooth and creamy.
2️⃣ Fold in finely diced strawberries.
3️⃣ Divide into silicone molds, insert sticks, and freeze overnight.
4️⃣ Melt white chocolate and macadamia oil together until smooth.
5️⃣ Pour into a tall glass and dip each frozen bar, letting the excess drip off.
6️⃣ Sprinkle with your favourite toppings immediately.
7️⃣ Return to the freezer for 30 minutes until the coating sets.
8️⃣ Remove a few minutes before serving and enjoy.

🥔 Irish Nachos
We made it to Ireland, so we cooked Irish. Crispy, cheesy, and very addictive. 🇮🇪🥑

🛒 Ingredients

4-5 large potatoes 🥔
1 package sliced bacon 🥓
100 g shredded cheddar 🧀
1 tbsp Soilmates Avocado Oil 🥑
Salt, pepper, paprika, garlic powder 🧂
Fresh chives 🌿

For the dip:
50 g crème fraîche 🥛
Fresh chives 🌿
Salt and pepper 🧂

👩‍🍳 Instructions

1️⃣ Preheat oven to 200°C.
2️⃣ Wash and slice potatoes into 3mm thin slices, skin on. Drizzle with avocado oil and season with salt, pepper, paprika and garlic powder. Toss well.
3️⃣ Arrange in a single layer on a lined baking tray. Bake for 20-25 minutes, turning halfway, until golden and crispy.
4️⃣ Twist bacon slices into loose swirls and bake for 8-10 minutes until crispy. Break into small pieces.
5️⃣ Layer crispy potatoes in an ovenproof dish. Add half the cheddar, bacon and chives. Repeat with a second layer.
6️⃣ Bake for 10 minutes until cheese is melted and bubbling.
7️⃣ Mix crème fraîche with chives, salt and pepper for the dip.
8️⃣ Serve immediately with the dip on the side.

🌶️ Bacon-Wrapped Jalapeño Poppers
Race day snack sorted. Hot, crispy, and gone before lap one. 🏎️

🛒 Ingredients

8-10 jalapeño peppers 🌶️
100 g cream cheese 🧀
100 g mixed grated cheese (cheddar and mozzarella) 🧀
1 pack of bacon slices 🥓
Salt, pepper and garlic powder 🧂

For the herb feta dip:
1 tbsp Greek yogurt 🥛
100 g feta 🧀
Fresh herbs (cilantro, mint and parsley) 🌿
1 tbsp Soilmates Avocado Oil 🥑
Juice of ½ lemon 🍋
Salt and pepper 🧂

👩‍🍳 Instructions

1️⃣ Preheat oven to 200°C.
2️⃣ Cut jalapeños in half lengthwise and remove seeds and membranes. Leave some seeds in for extra heat.
3️⃣ Mix cream cheese, grated cheese, salt, pepper and garlic powder until combined.
4️⃣ Fill each jalapeño half with the cheese mixture and wrap with a slice of bacon. Secure with a toothpick if needed.
5️⃣ Arrange on a lined baking tray and bake for 12-15 minutes until bacon is golden and crispy.
6️⃣ Blend yogurt, feta, fresh herbs, avocado oil, lemon juice, salt and pepper until smooth and creamy.
7️⃣ Serve hot with the herb feta dip on the side.
