🌮 𝐌𝐞𝐱𝐢𝐜𝐚𝐧 𝐁𝐚𝐤𝐞𝐝 𝐓𝐚𝐜𝐨𝐬
Crispy oven-baked tacos filled with seasoned beef, beans, and corn finished with melted cheese and served with fresh toppings for the perfect bite!

🛒 Ingredients (for 8 baked tacos)

1 small onion 🧅
2–3 cloves garlic 🧄
Soilmates Avo 🥑
300 g ground beef 🥩
1 tsp taco seasoning 🌶️
1 tbsp tomato purée 🍅
1 small can corn (drained) 🌽
1 small can kidney beans (drained & rinsed) 🫘
8 small tortillas 🌯
Shredded cheese (Mexican blend or cheddar) 🧀

For serving:
Sour cream or crème fraîche 🥛
Guacamole 🥑
Jalapeños 🌶️
Fresh cilantro 🌿
Lime wedges 🍋

👩‍🍳 Instructions
1️⃣ Preheat oven to 180°C.
2️⃣ Finely chop the onion and garlic.
3️⃣ Heat a little avocado oil in a pan over medium heat. Sauté onion and garlic until soft and translucent.
4️⃣ Add ground beef and cook for 3–4 minutes, breaking it up with a spoon.
5️⃣ Stir in taco seasoning and tomato purée. Cook for another 3–4 minutes.
6️⃣ Add corn and kidney beans, cook for 2 more minutes, then remove from heat.
7️⃣ Line a baking tray with baking paper and lightly drizzle with avocado oil.
8️⃣ Place a tortilla on the tray, add beef mixture to one half, top with cheese, and fold into a half-moon shape. Press gently. Repeat for all tacos.
9️⃣ Lightly drizzle tops with avocado oil and bake for 12–15 minutes, until golden and crispy.
🔟 Serve with sour cream, guacamole, jalapeños, cilantro, and lime wedges.

🥔 Potato Crust Quiche

Here is a delicious gluten-free twist on your classic quiche, with a crispy potato crust and a creamy vegetable filling!

🛒 Ingredients

700 g small potatoes (skin on) 🥔
Soilmates avocado oil (for greasing and roasting) 🥑
300 g fresh spinach 🌿
250 g bimi (or green asparagus when in season) 🥦
250 ml heavy cream 🥛
4 eggs 🥚
150 g grated cheese (Gruyère, mozzarella, cheddar, or a mix) 🧀
Salt, pepper, and nutmeg (to taste) 🧂

👩‍🍳 Instructions

1️⃣ Boil the potatoes with the skin on until tender. Drain and let cool slightly.
2️⃣ Heat a little Soilmates Avocado Oil in a pan and sauté the spinach until wilted. Set aside. In the same pan, grill the bimi until lightly charred but still crisp.
3️⃣ Preheat the oven to 200°C. Grease a cake or tart tin with avocado oil.
4️⃣ Add the potatoes and press them into an even layer across the base and sides to form a crust (use the back of a spoon or the bottom of a glass). Drizzle with a little extra oil.
5️⃣ Bake the crust for 15 minutes, until lightly golden and set.
6️⃣ In a bowl, whisk together the eggs, heavy cream, grated cheese, and sautéed spinach. Season with salt, pepper, and a pinch of nutmeg.
7️⃣ Remove the crust from the oven and pour in the filling. Arrange the bimi on top.
8️⃣ Bake for 25–30 minutes, until golden and fully set.
9️⃣ Let cool slightly before serving. Serve with a fresh salad and enjoy 🥔✨

🍫 Double Chocolate-Covered Raspberry Bites
Here is the perfect bite-sized treat.

🛒 Ingredients

200 g white chocolate 🍫
200 g dark chocolate 🍫
1 tbsp Soilmates macadamia oil
150 g fresh raspberries 🍓

👩‍🍳 Instructions

1️⃣ Break the white chocolate into pieces and melt it using a bain-marie or microwave in short intervals, stirring until smooth.
2️⃣ Using a toothpick or cocktail stick, dip each raspberry into the melted white chocolate until fully coated.
3️⃣ Place the coated raspberries on a tray and freeze for 10 minutes.
4️⃣ Break the dark chocolate into pieces. Add macadamia oil and melt until smooth.
5️⃣ Remove the raspberries from the freezer and dip them into the melted dark chocolate until coated.
6️⃣ Let them set before serving, or store in the freezer until ready to enjoy. 🍫✨

A quick 10-minute energy boost!

🛒 Ingredients
8 pitted dates 🌴
1–2 tbsp peanut butter 🥜
100 g dark chocolate 🍫
1 tsp Soilmates avocado oil 🥑
Flaky salt and pistachios (optional, for topping) 🧂🌰

👩‍🍳 Instructions
1️⃣ Make a small incision along each date.
2️⃣ Fill each date with peanut butter using a knife or small spoon.
3️⃣ Melt the chocolate with avocado oil (bain-marie or microwave in short intervals, stirring in between).
4️⃣ Drizzle the melted chocolate over the dates.
5️⃣ Sprinkle with flaky salt or chopped pistachios (optional).
6️⃣ Let set slightly, then enjoy! 🍫✨
