Since my first encounter with burnout eight months ago, I’ve been forced to take life at a much slower pace. Something I never really learned throughout my career in the kitchen, where everything revolves around time. Deadlines, lunch and dinner rushes, endless prep lists, and the feeling that there’s never enough time to finish everything.

To escape that, I always turned to records and music. But now, because I have to slow down, music has become something more. As corny as it sounds, listening to records with my full attention, instead of having them play in the background, feels like a form of meditation. It helps me cope with the daily hustle and reminds me to be present.

Turmeric and black pepper have been a couple longer than any marriage on record.

A 1365 javanese court text already had them paired up. indian and south asian kitchens were on it earlier. Nearly seven centuries in and they’ve never asked for space, never gone to therapy, never had a rebrand.
