Lined up from left to right: Singelburger, Herenburger, Keizerburger and Prinsenburger: some of Wynand Fockink’s most historic recipes.

Their names refer to old Dutch social ranks: Engelburger (citizen), Herenburger (gentleman), Keizerburger (emperor) and Prinsenburger (prince). As you moved up the hierarchy, the bitters became more distinctive, complex and challenging in character.
