Java Arabica Natural Hydro Fermentation

Indonesia — KoJoYo Cooperative, Sindoro Region

KoJoYo grows coffee on the slopes of Mount Sindoro in Central Java. The cooperative is part of a new generation of Indonesian coffee producers focused on experimentation, innovative fermentation methods, and expressive terroir-driven coffees.

Founded in 2019 by Wahyu Setiono, KoJoYo supports around 250 farmers across six districts in Temanggung. The cooperative was created to help farmers transition from to***co farming to sustainable specialty coffee production while improving economic opportunities within the local community.

Beyond coffee quality, KoJoYo also focuses on social impact and regenerative farming practices, including organic cultivation, soil restoration, and natural fertilizers. Through partnerships with local initiatives, the cooperative also creates opportunities for community reintegration and employment through coffee production.

Processing
Java Arabica Natural Hydro Fermentation

Only the ripest red cherries are handpicked and fermented for six days using the Intenso yeast strain. The coffee is then dried on raised beds for 3 days, followed by 14 days inside a drying dome and rested for 7 days. After resting, the coffee continues drying in the dome for another 7 days until the ideal moisture content is reached. The dried cherries rest for one month before being hulled and hand sorted.

Robusta Craigmore Tinyspot

A small-scale, family-run coffee plantation in the rolling hills of Coorg (Karnataka), India. With three generations of experience, the family is dedicated to sustainable coffee, grown under the dense shade of native jungle trees.

Biodiversity here speaks for itself: over 135 bird species, alongside a rich ecosystem of insects, wild elephants, civet cats, Malabar squirrels, wild boars, deer, and even the occasional wild cat.

This Robusta is grown at 1,000 meters above sea level, with around 1,500 mm of annual rainfall. The estate is completely free from pesticides and herbicides and is transitioning to regenerative agriculture. The focus is on healthy soils, increased carbon sequestration, and a thriving microbiome of bacteria and fungi — the foundation for future-proof coffee.

Pure, vibrant, and rooted in respect for nature. Roasted in Amsterdam, espresso at Bruno’s.

Nestled on the fertile slopes of the Kilimanjaro lies APK Estate: a coffee plantation where Colombian expertise meets the rich African soil. African Plantations Kilimanjaro (APK) is part of the family-owned Oro Molido, which has been producing coffee in Colombia for three generations. Since 2010, they have brought their knowledge and craftsmanship to Tanzania, cultivating premium Arabica coffee in a way that is unique to the region: with a focus on people, the environment, and quality.
Thanks to its high-altitude location, mineral-rich volcanic soil, and stable, sunny climate near the equator, the coffee plant thrives exceptionally well here. Meltwater from Kilimanjaro nourishes the plantations through a smart irrigation system, and all energy on the farm comes from the sun—a sustainable solution in a region with limited access to electricity.
What truly makes this coffee special are the people behind it. Every coffee bean is hand-planted, picked, and processed by local workers who operate with care and dedication. APK believes that the quality of specialty coffee starts with its people, and therefore invests heavily in their well-being. By fostering local leadership and collaborating with cooperatives, not only does the coffee flourish, but the community does too. Their foundation supports schools and healthcare in the region—38 schools have received maize, and medical check-ups are more accessible than ever.
