Saving the sweetest part for last 🍮✨ We’re serving a Trio de Sobremesas, three mini desserts inspired by Brazilian classics! All made with cassava and other tropical ingredients. We’ve even crafted some more delicious vegan sweets for this Pop-up! Time for the heart of our brunch: our tapioca mains 💛 Inspired by Brazil, made for everyone. Each flavor tells a different part of our RAIZ story. Everything is home-made, with a lot of love. Our brunch starts with a classic 🇧🇷✨
We’re opening the menu with Dadinho de Tapioca, those crispy tapioca–cheese bites that every Brazilian knows and loves. As a vegan alternative, you can expect another classic: Mandioc fries! Both are fried and oven baked to golden perfection, served with our homemade herb aioli and chili jam. A small bite that carries big flavor (and tastes like home).

✨ Our second Pop-up, this time in Castricum!

After our first crazy tapioca rush in Utrecht, we wanted to slow things down and create something more intimate. Together with the lovely team at .nl , we transformed their co-working space into a tropical dining room for our guests. One big family-style table, filled with Brazilian music, bright mocktails, and the smell of our roots in the air. 🌿💛

We shared a kitchen (and a lot of laughs) with Sukha’s super sweet crew, who helped us deliver the vibe we dreamed of. Every ingredient we used was organic and locally sourced, with fresh produce coming from and other local partners.

It was a day to remember, and now a place to call home... warm, colorful, and full of connection. 
RAIZ keeps growing, one pop-up (and one mandioca dish) at a time.

Dadinho de Tapioca 🇧🇷🧀
 Small dice, big flavor. Crispy on the outside, soft and chewy inside… A special texture you need to try to understand.

The original recipe was created by chef Rodrigo Oliveira, from São Paulo’s legendary restaurant Mocotó, and it quickly became a national favorite. Simple ingredients, magical result.

✨ What’s inside:
* Tapioca pearls (cassava starch)
* Queijo coalho (or halloumi if you’re abroad)
* Milk
* White pepper
* A pinch of salt
* And a touch of love before frying until golden perfection.

We like to serve it with our spicy and sweet chilli jam, and a bright herb aioli. Pure happiness in cube form 🎲

✨ Back in June, RAIZ was still in idea mode, quietly preparing for our first small pop-up when a call from accelerated everything.
 They invited us to join the Arraiá da Bossa in Utrecht and serve our tapiocas to hundreds of people. We had never done anything like it, but decided it was the perfect chance to test if people would love our food - and if we loved cooking it as much as we thought we would 😅

From a last-minute “yes” to a day of non-stop tapiocas, it turned out way better than we expected! We learned a lot, got great feedback and met so many awesome people!   A huge thank you to all of our friends who made this possible, helping us prep, pack, drive, and constantly cheering us on. 💛  Another thank you to , for being a great host and organiser, and to all other food entrepreneurs that continue sharing and helping us develop! 
That day showed us that our roots are worth serving, and that we’re just getting started.

Meet Gabriel, carioca, dad, and the savory brain behind RAIZ. His day-job is building ventures, and cooking is a shortcut back to his roots.

RAIZ literally started as one of his dreams and it was brought to reality as a place to explore, play, and bring these roots to more Dutch tables.
