Damascene Kibbeh b Laban • كبة لبنية

Comes in different cooking techniques. For this one:
Kibbeh stuffed with mince and walnuts, fried for delivery/packaging stability.

Yoghurt: creamy but not thick as Shishbarak’s for instance.

The distinct in this, is the tarragon sprigs, in Damascus and only in Damascus they use tarragon with the yoghurt. I used it as a garnish finish as it’s a very acquired taste profile.

Slow stewed lamb in tomato sauce & okra, served with rice.

Portokalopita • كيكة البرتقال اليونانية

Greek Orange Cake. The hybrid of cakes and baklava if you ask me.
Has no flour, but relies on it from the phyllo dough that makes most of the ingredients in this cake, plus a big amount of sugar syrup to revive it after it’s baked.

Qers Ogaili • قرص عقيلي
A traditional Kuwaiti saffron with profiles of sesame and cardamom.
Served with Saffron Condensed milk sauce, and Tahini Chantilly.

Home cut fries, aubergine, Turkish pepper or bell pepper.

Yoghurt tahini sauce
Chilli, lemon, garlic, and vinegar condiment on top.

sade poğaça (بالعربي أنا بسميها بقجة) A Turkish staple that comes in different shapes and fillings, but for this, Sade, it actually means plain in both Turkish and Arabic. They’re one of the best baked goods one could ever have. I’d argue they’re my best in the bagel family after Jerusalem Bagels.
