Our beer is kinda weird, and the flavors are unconventional. It all has started as a homebrewing project with about 10 beers, presented at the Kyiv beer festival. Encouraged by the positive feedback, we pr

oceeded to contract brewing and the recreation of home-invented recipes on a bigger scale, brewed collabs with Ukrainian and European breweries. Two years ago, we managed to build our own small facility, install equipment, and start a full-fledged brewery.

Salt in beer sounds like a mistake.
Which is exactly why we like it.

But this is not “someone accidentally oversalted the tank and called it a style”. In Gose, salt and coriander are part of the story. A little weird, a little rebellious, but very real.

And here’s where science enters the bar. Salt does not simply make beer “salty”. In the right dose, it works more like a flavor switch. It can sharpen acidity, make the sip more drinkable, and soften some bitterness so the other notes can step forward.

That’s not bartender folklore. There’s research on how NaCl affects bitter taste receptors in humans. The short version: salt can change how we perceive bitterness, but not like magic. It depends on the exact compounds and receptors involved. So no, it’s not a cheat code. It’s a tool. And we respect tools that know how to break rules properly.

That’s why salt in Gose is not “we added it because we could”. Though, honestly, we could. It’s there to build the flavor: sour, bright, clean, and not turning into a fight in your mouth.

We have a Gose with strawberry and vanilla on the site right now. The salt does its quiet dirty work there: lifts the berry, keeps the balance, and stops the whole thing from becoming polite dessert juice.
