Menu for Sat 1/4

Hello!

This week I will be making sugarcane shrimp & noodles. There are spicy and non spicy noodles and the whole menu is available with meat or pescatarian.

Chạo Tôm (sugarcane shrimp) is prawn that is wrapped on sugarcane and grilled. During cooking the sugarcane adds sweetness to the prawn patty. It is served with woven vermicelli and lettuce for wrapping the prawn in and fish sauce for dipping.

Bún Lào is spicy and sour noodles. Lao because the chilli paste used for the sauce has Laos roots. It has bean vermicelli, juicy fish cake, prawns, pork mince, carrot, onions and thai basil. The spice is well balanced with the sourness from lemons.
Miến Xào is the non spicy version, but with an oyster soy garlic sauce.

Like always, the shared set menu comes with rice paper rolls & fried spring rolls.

Tết is the most important holiday for Vietnamese people. We pay respects to our ancestors, go to the temples, gather with family members to talk, exchange wishes, give money to the kids and of course, eat a feast together!

I will be cooking and sharing with you some of the most important dishes in a typical Tết meal.

It wouldn't be Tết without Bánh Tét. Glutinous rice, fatty pork and mung beans are rolled in banana leaf and cooked for many, many hours (hello next gas bill). The banana leaves stain the rice green and the pork becomes super tender. It is known as Bánh Chưng in northern Vietnam and it is square whereas the southern version is cylindrical.

Thịt Kho gets its signature color dark and flavour from fish sauce and caramelized sugar. It is then cooked in coconut water until tender. A typical Southern Vietnamese dinner became a popular New Year dish as it stays fresh for many days which was essential as all businesses and restaurants close over the Tet holiday.

Bánh Tráng Trộn is a fun salad with many different textures.

Then finish with a refreshing coconut fruit cocktail.

Lunar New Year is celebrated by over 1.5 billion people but all these flavours are unique to Vietnam.

This Sunday, I will be cooking Chạo Tôm (sugarcane shrimp) and Mì Khô Thập Cẩm (combination dry egg noodles). The whole menu is available as pescatarian.

Chạo Tôm is prawn and bamboo that is wrapped on sugar cane and grilled. During cooking the sugarcane adds sweetness to the meat. It is served with woven vermicelli and lettuce for wrapping and nuoc mam dipping sauce.

Mì Khô Thập Cẩm consists of dry egg noodles, xa xiu (slow roasted red pork), prawns, squid, quail egg, chives, and bean sprouts. All brought together with a delicious garlic, shallot and oyster sauce.

The Vietnamese are great at throwing many different things and elements into a dish, especially to use up leftovers. Thap Cam means combinations and when you order this, you will end up with a little bit of everything.

Hello and happy new year!

This weekend I will be making Bo Kho braised beef stew and Nem Nuong pork skewers. Perfect for meat lovers.

Bo Kho
Beef is slow cooked in a broth flavoured with lemongrass, cinnamon, star anise, ginger, garlic, tomato and five spice. It has potatoes and carrots and is served with vermicelli, thai basil and onion.

Nem Nuong
Juicy pork skewers with woven vermicelli. Take a lettuce leaf, place a piece of woven vermicelli in it along with some pork skewers and pickled veges then dip into nuoc mam dipping sauce.

Price Increase for 2023
Huge inflation has been inevitable and no household or business can escape the reality of it. High energy and gas prices have driven my kitchen rent up 10% (a 50% increase since I started in 2020!) and buying costs of ingredients have gone up 9.9% which means I have to increase my prices to match the national CPI in order to stay afloat.

I hope you had a wonderful Christmas celebrating with family and friends and are looking forward to the new year.

I am offering the same menu I offered 2 weeks ago which I had to cancel and promised that I will have again.

I will be making sticky rice & banh khot mini pancakes.

Xoi Man (sticky rice) is the ultimate Vietnamese comfort food. Sticky rice is chewy and is topped with premium asian ingredients, drizzled with spring onion oil and garnished with fried shallots. Every mouthful is different.

Banh Khot (mini pancakes) gets its distinct color from turmeric. It is a coconut pancake with either pork & prawn, prawn or vegetarian prawn which is made out of soy protein. Wrap it in a lettuce leaf and dip into nuoc mam dipping sauce.

I have tried to list all the different ingredients for the regular, pescatarian & vegetarian, vegan menu on the menu card.

It's been a while….
I have had many people ask me to cook for Amsterdam so I will make a menu for you this Saturday.

This week I will be making sticky rice & banh khot mini pancakes.
I am quite certain that you cannot order both these dishes anywhere in the Netherlands but from me 😉

The sides are rice paper rolls and fried rolls. The menu is made for sharing between 2 people and the price includes delivery to Amsterdam. Food is delivered cold and will need to be reheated.

Xoi man sticky rice is glutinous, chewy and is stopped with chicken, pork floss, Vietnamese ham, Chinese sausage, dried shrimp. All premium ingredients which is why grandma only made this once a year for lunar new year. It’s drizzled with spring onion oil and topped with crunchy fried shallots.

Chao Tom are shrimp and bamboo wrapped on sugarcane which gives it a natural sweetness. It’s served with woven vermicelli, salad and fish sauce.

It's been a while since I've offered a menu for Amsterdam. This set menu is one for the chilli lovers. I'll be making burnt rice salad (by popular demand!) & spicy and sour noodles.
