Three intense days. So many conversations. So much inspiration. 🌊

A big thank you to everyone who made the first edition of such a great meeting point for the foodservice community.

Chefs, foodservice experts, researchers, buyers, restaurant owners, bar owners and catering professionals, all coming together to taste, learn, share and talk about where food is heading next.

A special thank you to the (ESWA) - Eef Brouwers, Aris Molenaar and Paul Einerhand - and all their partners for creating such a great space around the seaweed world. 🌱

And a big thank you to the team, Leisure Group, Sander Verschuren and Marco Ouwerkerk for organising the Chefs Table.

For us, one of the highlights was seeing Monkeys By The Sea products cooked and plated by chefs, and being able to invite our clients to taste them right there at the show. 👨‍🍳🌊

A special shoutout to Marta Marszal for helping make it happen, Nicole McMahon from Trouble & Spice for featuring our Ocean Chunks wrapped in crispy chilli oil, and Bart Brummans from Zoetzuurtje for the tastiest pickled veggies. 🙌

We also got to dive deeper into the world of seaweed, where it comes from, how it's cultivated and its nutritional potential, including its natural contribution to omega-3.

🧪 Methylmercury.
EFSA warns that large predatory fish (tuna, swordfish, shark) still carry a neurotoxic risk. Especially for pregnant women and kids. Latest assessments confirm: the concern remains.

🧪 Microplastics.
2024: Alfred Wegener Institute, microplastics in 50%+ of marine species.
2023: University of Hull, particles found in commercially sold seafood. Small enough to cross the gut barrier.
FAO: tracking it as an emerging food safety threat.

🧪 PCBs. Dioxins. Antibiotic residues.
Regulated? Yes. Present? Also yes.

A few days ago, we held our French market expansion meeting with Thijs Wullems, Priti Patel, Angela Smith ACC, and Claudia Vásquez Alarcón to discuss how we can expand By The Sea’s presence in the French market.

Early this year, the bakery Land&Monkeys - Boulangerie Coffee Shop liked our Ocean Chunks and decided to launch for Parisians the “Sandwich Marin" 🌊🐒.

We’re already present in France through our distributors, and now we’re looking for new opportunities to grow.
