“By the Dutch” produces an Dry Gin, Old Genever and oak aged Batavia Arrack (Indonesian Rum), supported by three different cocktail bitters (Classic, Orange and Ginger). "By the Dutch" - Old Genever:
Our "Old Genever” is made according to an old recipe dated back to 1942. The smooth, subtle and malty flavour comes from using a high maltwine-content, made from rye, corn and malted barley, triple-d
istilled in copper pot stills. This maltwine – the base of the genever – is then infused and blended with carefully selected distillates from juniper berries and botanicals (hops, cloves, anise, licorice, ginger, citrus and many others) and brought to 38% alcohol; a percentage carefully chosen by the master-distiller for the perfect balance of aroma and mouth-feel. "By the Dutch" - Batavia Arrack Rum:
Our “Batavia Arrack” is a distillate based on sugar-cane molasses, produced exclusively on the island of Java, Indonesia, dated back to the 17th century. It’s comprised of a very specific range of Pot still distillates. It’s the “Rum of Indonesia”. The fermentation process includes the addition of local (red) rice; it is this, which sets it apart from Rum, although the base material is still sugar-cane. Distillation of our Batavia Arrack is carried out using very traditional Pot stills, adopting ancient Chinese distillers’ methods. Our Master Blender created a excellent product, aged in oak barrels up to 8 years, resulting in fantastic rich and deep flavors, lingering on the palate.
