Yiiihaaaa! Once again, Those Vegan Cowboys’ team of hand made wooden bow shooters beat the off-the-rack competition 💪🏹

This weekend at the Dutch Longbow (NK Hout) Competition, on the wild plains of Zoetermeer, TVC’s Founding Father Jaap came in 2nd, Raymond van Dijk 3rd, Joost Jacobs 4th - Oude Doelen Roosendaal

Ruud de Laat came in 1st, which is no small feat: since Jaap re-introduced hand-made bows in longbow shooting, using a regular bow has apparently become more challenging 🤠

Congrats to all winners! The ‘Oude Doelen’ members shone brightly in their blue sponsored Those Vegan Cowboys’ shirts 👕 our Iron Lady Margaret couldn’t be more proud.

…And then to realize that cheese is just the beginning. We discovered there’s a whole world of caseins, waiting to be explored, without the animal ever shakin’ a tail.

🧀 That said: it’s okay to simply crave that cheese. We all do.

🤝New partnerships brewin’. Hats off to everyone we met at IFT 🤠

Chicago is a wrap and the world’s biggest food innovation conference sparked new connections, excitin’ conversations and a whole lotta bold protein questions ready to be answered.

FOR THOSE WHO MISSED IT
Margaret’s Finest is our open invitation to food innovators. A precision fermentation platform built to unlock the full natural diversity of animal-identical dairy proteins. From buffalo to goat, sheep to llama and beyond, a world of naturally occurring proteins with extraordinary functional properties that the food industry has never had the tools to explore. Until now.

Dairy R&D is no longer limited by what the cow produces. And there isn’t a single roadmap for bringing a breakthrough technology like this to market. The path is not something you discover alone. Together with our new industry partners, we’re excited to discover what comes next.

“We discovered that we can successfully express caseins from other species as well. That’s when you realise the possibilities are almost endless.

Perhaps one type offers superior digestibility or reduced allergenicity, another delivers better melt, while yet another has unique nutritional or functional properties. We simply don’t believe we can, or should, answer all of those questions on our own. That was the start of thinking about the Margaret’s Finest programme.” - Hille van der Kaa, CEO. Full interview 🔗 in bio.

🦾 Meet Margaret’s Finest: our brand new precision fermentation platform. It’s built to unlock that entire world of naturally occurring caseins, without the animal.

✌️As Hille explains to Green Queen Media , it’s the key to evolve beyond the biological limitations of conventional dairy, and drop the supply chain complexity, the environmental, ethical and geopolitical risks that come with it.

🇺🇸 MEET US AT IFT FIRST IN CHICAGO
This week at Institute of Food Technologists (IFT) Chicago, the world’s biggest food innovation conference gets to meet Margaret’s Finest first. An open invitation to pioneers in food, to come ride with us and bring your boldest protein questions. Together, we’ll set out to find answers traditional dairy never could.

GOT A BOLD PROTEIN QUESTION? 🤠
Drop it here - we’ll pass it straight on to Will and Lana in Chicago!

POST HEATWAVE PHOTODUMP ❤️‍🔥 hot from the ranch.

1. 3D-printed, hand-painted mini Margarets to surprise some colleagues. Only one cowboy could pull that off: Winter ‘Devil is in the Details’ Declerq. Hats off to you Winter.
2. ‘Old Steady Hand’ Stijn Tryin’ to keep his hands steady with a TV crew breathin’ down his neck
3. Yearly midsummer kubb & spikeball ritual to appease the gods of science. Worked for us so far!
4. The Sheriff teachin’ the young ‘uns Technology Park lore of the days of yore (another yearly tradition)
5. G.U.M. GHENT got us wonderin’ what this fly lady’s casein could do
6. Chief Hille radiatin’ cool at Sustainable Foods Summit in Amsterdam
7. ...and we put Margaret’s Finest casein to good use on a plant-based burger. Looks as good as it tasted. Lab cowboys only for now, but we’re comin’ soon to the U.S.A. 🇺🇸 more about that next week (!)

🇺🇸 USA, the paperwork is in. And we’re comin’ over to make new friends 🤝

Short version:
Next milestone for cow-free cheese: check 🧀🦾

Version for folks who like details:
Together with fellow fermentation pioneers Formo, we have submitted our self-affirmed GRAS dossier with the FDA. Or actually, we filed in Dec ’25 but now it’s official for all the world to see!

GRAS stands for “Generally Recognized As Safe”. A critical regulatory milestone for bringing a new food ingredient to the US market. Filing doesn’t mean approval yet (we expect the coveted “no questions” letter later this year), but it means we’ve done the science, the homework and our cards are now on the table. Meanwhile, we prep for a very real USA launch 🚀🧀

*What we’re filin’ for? Casein of course.*
The magic milk protein that makes cheese actually taste like cheese, made by microbes instead of mammals. For the first time, y’all get to enjoy real cheese without the cow. Fermented, not farmed, brewed with love by cows of steel.

*Let’s meet up*
This ain’t just filing paperwork, us cowboys are coming to America in person. This July, our very own Lana ‘Doc’ Zivanovic and Will ‘The Sheriff’ van den Tweel will be at IFT25 in Chicago, ready to talk business with US partners, retailers, and fellow food pioneers.

Real cowboy, but is he De Faker?

Our former CCO Robert ‘Tall One’ van den Breemer (now Chief at ) and his kin rode in on Dutch TV and made the whole ranch proud.

Stick around for the smoothest Those Vegan Cowboys pitch this side of the Mississippi delivered by Robert’s 6-year-old son.

Or… is he? 🤠

Had a real good chat with Dutch state secretary Erkens, minister van Essen and the other ministry folks shaping tomorrow’s food policy. And successfully kept them from dunkin’ their fist into Margaret’s milk chocolate fountain.

Those Vegan Cowboys rode into The Hague with our Cellular Agriculture Netherlands network partners at the LVVN (Dutch ministry of ag, fish & nature) stakeholder event.

Big picture: the future of food needs bold investments, honest conversations, and people willing to saddle up for change.

We’re ready for all three 🤠 Lookin’ forward to hittin’ home our shared ambitions for a just food system 💪
