Welcome to Episode 2 of Food & Migration!
This time, it’s all about Chocolate or ‘Xocolat’ which comes from xocol–bitter, atl–water, words in Nahuatl, one of the official languages of Mexico. 🔥
I made a fully vegan chocolate cheesecake using soy yogurt, tofu, cashews, a touch of Asian flair for a Latin American heart, plus organic South American cacao (Red Tractor) and Whittaker’s Dark Ghana from New Zealand.
This one’s more personal, more layered. I played with rhythm in the storytelling, see if you can feel it!

Quick cacao facts:
🍫 The oldest cacao traces were found in Ecuador, over 5,300 years ago, with theobromine (a compound found in cacao) residue in pottery.
🗿 The Olmecs were the first to process and drink cacao around 3500 years ago. The Mexicas (Aztecs) used it as currency and for rituals.
🥄 They drank it bitter, with chili, vanilla and maize, not sweet like today.
🌍 Now, 70% of the world’s cacao is grown in West Africa, but its roots are deeply Latin American.
