We went straight to Jenid's shop in Bangkok to find out what real, made-to-order Isaan cooking looks like. Jenid is originally from the Isaan region, and she makes some of the best local papaya salad and pork stir-fried basil (pad kra pao) we've tasted.

We sat down with her to talk about what it's really like cooking in Bangkok, her specialties, and of course — we ate. Every bite was worth it.

People think that salmon (laks) is super fancy (Norwegians u are very lucky u have it cheaper 💸) but it used to be poor people’s food.

Then Norway literally invented salmon sushi and sold it to Japan in the 80s salmon 🍣 (they sent a diplomatic delegation to promote it). And now there’s this huge wild vs. farmed debate nobody can settle. 🐟❌
