Bite-sized banana pancakes with a crunchy cereal twist. Perfect when you want something a little special for your weekend. How do you elevate your weekend brekkie?​

Ingredients
2 bananas, sliced into 5 cm thick medallions​
1/2 cup wholemeal flour​
1/2 cup So Good™ Oat Milk No Added Sugar​
1 teaspoon baking powder​
1 teaspoon white sugar​
1 teaspoon vanilla extract​
½ teaspoon cinnamon​
6 tablespoons Sanitarium™ Cluster Crisp™ Vanilla & Almond​
Optional* cooking spray for frying​

Method
1. To a bowl, add the flour. Whisk in oat milk, baking powder, white sugar, vanilla extract, and cinnamon. Fold in Sanitarium Cluster Crisp Vanilla & Almond.​
2. Slice the bananas to 5 cm medallions.​
3. On medium heat, heat a non-stick frying pan or add a little cooking spray.​
4. Using a fork, dip the bananas into the pancake batter and place them in the pan.​
5. Repeat until the pan is filled with coated bananas.​
6. Fry until golden and flip.​
7. Serve in a bowl with fresh blueberries and maple syrup.

Golden and crispy perfection! These haloumi/tofu sticks coated in Sanitarium Skippy cornflakes are the ultimate quick and delicious snack. Just a few steps for a crunchy, flavourful treat! ​


Ingredients
1 cup Sanitarium™ Skippy™ Cornflakes (crushed)​
200g Haloumi or tofu​
¼ cup wholemeal flour​
pinch of salt and black pepper​
Olive oil cooking spray​

Method
1. Preheat your oven to 200°C. Line a baking sheet with parchment paper.​
2. Cut the haloumi or firm tofu into stick-like shapes.​
3. In three separate shallow dishes, set up your coating stations:​

Dish 1: Wholemeal flour seasoned with a pinch of salt and black pepper.​

Dish 2: Beaten egg.​

Dish 3: Crushed Skippy Cornflakes.​

4. One at a time, coat each haloumi/tofu stick in the flour mixture, then dip it into the beaten egg, and finally roll it in the crushed Skippy cornflakes, pressing the cornflakes onto the haloumi/tofu.​
5. Arrange the coated haloumi/tofu sticks on the prepared baking sheet, leaving space between each stick. Spray with olive oil cooking spray to lightly coat the sticks.​
6. Bake in the preheated oven for about 6-8 minutes or until they are golden brown and crispy. Flip them halfway through the baking time for even browning.​

Allow them to cool for a few minutes before serving.​ Enjoy!

Craving a quick, tasty treat? Try these Skippy-crusted cauliflower bites for the perfect crunch! Skippy’s cornflakes aren't just for breakfast – they make a delightful crispy coating for an easy, fuss-free snack. ​


Ingredients
1 small Cauliflower Head​
1/2 cup wholemeal flour​
1/2 cup So Good™ Oat Milk No Added Sugar​
1 teaspoon dried garlic​
1 teaspoon smoked paprika​
1/2 teaspoon salt​
1/2 teaspoon ground black pepper​
1 1/2 cups Sanitarium™ Skippy™ Cornflakes (crushed)​
Olive oil cooking spray​

​Method
1. Preheat your oven to 200° C. Line a baking sheet with parchment paper.​
2. Wash and cut the cauliflower into bite-sized florets, removing excess stems.​
3. Whisk together the flour, oat milk, dried garlic, smoked paprika, salt, and black pepper in a bowl until you have a smooth batter.​
4. Dip each cauliflower floret into the batter, ensuring it's fully coated.​
5. Roll the battered cauliflower in the crushed Sanitarium Skippy Cornflakes, pressing gently to stick the cornflakes to the cauliflower.​
6. Place the coated cauliflower bites on the prepared baking sheet, leaving space between each piece.​
7. Lightly spray the cauliflower bites with olive oil cooking spray. This will help them become crispy during baking.​
8. Bake in the preheated oven for 20-25 minutes, flipping halfway through or until the cauliflower bites are golden brown and crispy.​



Prepare Dipping Sauce:​
1. While the cauliflower is baking, mix the low-fat Greek yogurt with smoked paprika in a small bowl. Adjust the smoked paprika amount according to your desired level of flavour.​

2. Once the cauliflower bites are done, remove them from the oven. Allow them to cool for a few minutes before serving. Serve the baked cauliflower bites with the yogurt dipping sauce on the side.

If eating a beautifully balanced parfait is a form of self-love - we're here for it! This one is the perfect balance of sweet, sour and crunch.

👥 Serves: 4 | ⏰ Prep Time: 10 minutes | ⏰ Cook Time: 20 minutes
INGREDIENTS:
1 1/3 cups frozen raspberries (180g)
1 1/2 Tbsp caster sugar
1/2 Tbsp lemon juice
1 tsp vanilla extract
2 cups unsweetened Greek yoghurt (500g)
2 cups Sanitarium Light ’n’ Tasty Berry or Sanitarium Light ’n’ Tasty Apricot
410g can peaches in juice, drained
Fresh strawberries, to decorate (optional)
🌼 METHOD:
Place raspberries, sugar, and lemon juice in a medium saucepan on medium heat. Bring to a gentle simmer, stirring occasionally. Continue to simmer for 15 minutes, or until thick and syrupy.
Remove from heat and stir in vanilla. Cool to room temperature, then refrigerate until needed.
Choose 4 small glasses or jars suitable for assembling the parfaits in. Take half of the yoghurt and divide evenly between the glasses. Do the same with the raspberry sauce, cereal, and then the peaches. Repeat to form two layers of each ingredient per parfait.
Top with strawberries, if using, and serve immediately.
